Looking for a simple recipe for a fruit pie/tart?

Possibly with berries and a premade shell. But what do I layer in between...cream cheese, pudding...???

Creamy Strawberry Pie

1 graham cracker crumb crust
1 (8 ounce) container Cool Whip, thawed
1 small box strawberry gelatin
1 cup chopped strawberries
2/3 cup boiling water
1/2 cup cold water
Ice cubes

In a large bowl, stir boiling water and gelatin for 2 minutes or until gelatin is completely dissolved.

Mix cold water and ice cubes to make 1 1/4 cups; add to dissolved gelatin, stirring until slightly thickened.

Stir in Cool Whip and strawberries with a whisk until smooth. Refrigerate for 15 minutes or until gelatin will mound. Spoon filling into pie crust and refrigerate until firm or about 4 hours.

Garnish with fruit and serve.

Fruit Cocktail Pie

INGREDIENTS

1 (9 inch) pie shell, baked
1 (15.25 ounce) can fruit cocktail
1 (4.6 ounce) package non-instant vanilla pudding mix
2 cups milk
1 pint heavy cream

DIRECTIONS

Drain fruit cocktail, reserving 1 cup of juice. In a saucepan, prepare pudding according to package directions, using 2 cups milk and 1 cup reserved juice. Remove from heat and stir in the drained fruit cocktail. Pour into baked pie crust and let set at room temperature until cooled. then place in refrigerator until serving time.

Place glass bowl and mixing beaters in freezer. Just before serving, whip up the heavy cream in the frozen bowl. do not add sugar, and do not over whip. Spoon on top of pie and serve.

4 cups blueberries or:
4 cups halved strawberries or:
4 cups peaches, peeled and sliced
2 tablespoons cornstarch
2 tablespoons water
1/2 cup corn syrup
2 teaspoons lemon juice
1 cup heavy cream
baked pie crust

In blender, process 1 cup fruit at high speed, for 30 seconds.
In a 2-quart saucepan, stir together cornstarch and water until smooth.

Add mashed fruit, corn syrup, and lemon juice.

Stirring constantly, bring to boil over medium heat and boil one minute.

Turn into bowl, cover surface with waxed paper to prevent a skin from forming.

Cool one hour. Fold in remaining fruit.

Spread cream on bottom and up sides of pie crust.

Fill with fruit mixture and level.

Chill 3 hours or until set.

This is the simplest recipe for a wonderful quick fruit pie, but you can call it a tart if you like. I take a pie plate and put a ready made pie crust in the bottom, put some dried beans in it (uncooked of course-this is to keep the crust from puffing up in the middle) and bake at 350 until very lightly brown around edges (I cook this one just about 5-8 minutes. Take out and cool. Now open up two cans of whatever pie filling you like, I like apple or peach is wonderful too, and pour into cooled pie crust, I then cut up a few little slices of butter and dot over pie filling. Put another ready made crust on top and seal it around the edges of the other crust (careful not to crack the crust that was pre baked), then cut a few slits in the crust and brush melted butter on top crust and sprinkle with granulated sugar. Put back into oven and bake until top crust browns lightly. Take out and let pie cool. Then you can slice and serve with whipped topping, it is very good.

P.S. Throw the beans away.

This may not be a pie, but you can have that creamy, fruity taste you're looking to make with a simple, yet DELICIOUS cobbler.

In a 9x13 pan, melt a stick of butter in the oven at 350 degrees F
While that's melting, in a separate bowl combine 1 cup of sugar, 1 cup self-rising flour, and 1 cup of milk
Take the pan out of the oven, put whatever fruit you want (berries, peaches, cherries, you name it- you can even use chocolate pudding!) into the pan and stir it into the melted butter.
Spread evenly, then pour the sugar/flour/milk mixture over the top and bake for 35 minutes, or until the top is golden brown

You can sprinkle the top with cinnamon and sugar halfway through.

Serve hot with ice cream- soooo good
