Question:

What is healthier and why, spelt bread or brown rice?

saying the spelt bread is organic, natural, and free of preservatives, artificial colors and additives. the brown rice is also organic, and is cooked in a rice steamer by myself...

Answers:
There's no way of determining the nutritional value of things cooked in the home. Here are some values for each grain so you can determine which nutrients your looking for:

Nutritional Highlights

Spelt, 2 oz. (56.7g) (flour)
Calories: 216
Protein: 8.1g
Carbohydrate: 42.25g
Total Fat: 1.67g
Fiber: 3.6g
*Excellent source of: Niacin (4.8mg), and Thiamine (0.37mg)
*Good source of: Iron (2.36 mg)

Rice, brown (long-grain, cooked), 1 cup (195g)
Calories: 216
Protein: 5g
Carbohydrate: 44.7g
Total Fat: 1.75g
Fiber: 3.5g

Spelt seems to be higher in protein, pretty much the same otherwise.
