Answers:
I make my own salsa !
Take 2or3 habenero peppers with organic canned tomatoes ,cilantro, onions,and garlic
blend the peppers and garlic with some of the tomatoes in a blender to get the peppers spread out .
chop the cilantro and onions and a pinch of cumin powder,and chili powder and a bit of salt
if you want a sweet salsa, just add a little sugar
and wow !! you got salsa !

Fresh fruit. There are so many awesome fruits in season right now. I make a huge fruit salad at the beginning of the week full of watermelon,strawberries and grapes and eat it all week. I'm also lucky enough to have plum trees in the back yard....mmmmm....warm plums right off the tree.

Fruit is always a good choice... summer is great for melons and strawberries- even bananas or grapes. Put in the fridge to make them nice and cold. Add some cool whip (lite) and you have instant dessert. Jello is always an old stand by. For a quick treat that is not too bad for you- mix whipped cream cheese with peanut butter (if you want a little sweeter try adding a little sugar or I prefer splenda). Put into parfait cups and let refrigerate until nice and cool. You can add cool whip lite if you like. Without the sugar... this is very diabetically friendly.

Here's my favorite, and it's SOOO easy, don't think it's hard. It's summertime and out comes the grill! Cut a variety of your favorite veggies into big bite sized pieces. Throw in a handful of bite sized pieces of tofu or seitan. (I like seitan best...drained) Put these veggies into a big bowl and pour a bunch of Italian dressing over it. Toss to make sure all the pieces are covered really good. Cover the bowl with clear wrap and put into the fridge for about an hour. Meanwhile, soak some of those bamboo or wooden skewers in water, too, because you're going to thread the veggies onto those (shish-kebobs). Soaking them in water helps them to not burn while on the grill. When the hour is about up, get the grill ready. Ok, spear the veggies alternately with the meat pieces onto the skewers to make shish kebobs. Put them on the grill. Watch them so they don't burn, and turn them frequently. When the veggies are tender, they're done! These taste so incredibly yummy. Even our non-vegetarian friends love these. I serve them with llittle bowls of Ranch dressing, or any favorite dressing for dipping. The Italian dressing that you marinate them in gives them such a great flavor you might prefer to eat them as is without dipping! Enjoy.
