Really good recipe for Fried Tofu?

I want a recipe for a pan-fried tofu NOT deep-fried. Like with a light sauce with chinese veggies. I don't mind a little bit of spice but nothing tongue searing. Please tell me the best tofu to use and please give recipe specific details. Thanks!

Marinate 1/2 inch slices of tofu in soy sauce for a few minutes. Just drizzle it on both sides and let it sit for about 5 minutes. Fry it in peanut or olive oil slowly until it is a bit crusty. That will help the soy sauce infuse into the tofu. A little grated fresh ginger, some onion, garlic, and a dash of toasted sesame oil will make it special. No need to salt it.

A seasoning that is nice with the soysauce and olive oil is italian mixed herbs. Sautee the tofu slices in it and while it is cooking, drizzle soy sauce on it along with the herbs, fresh sweet red bell pepper and some zuccini.

Look for the word "firm" on your tofu so it holds together well and does not break apart when you flip it. Be gentle. Silken is the most creamy and not good for frying because it it sort of gelatinous. White Wave firm is good, if your store carries it.

Just in case the link doesn't work www.vegweb.com and search for "general tao's tofu. Don't deep fry the tofu, just pan fry it with a little bit of oil until it's golden. Turn down the heat and put in 1 or 2 Tablespoons of soy sauce and cook until it is absorbed into the tofu. Follow the rest of the recipe. It's even better with some water chesnuts and sauted mushrooms added in.

Spicy Teriyaki Tempura Tofu

1- package firm tofu,drained

Teriyaki sauce-1/3 cup soy sauce, 1/2 cup brown sugar, 1/3 cup water, 1 tablespoon vegetable oil, mix thoroughly

jalapeno or other hot pepper

Tempura batter- beer and corn starch

Drain tofu and cut into 1/2" x 1/2" strips about 3" long, place tofu in dish and marinate with some of the sauce and sliced peppers. Let marinade for about 10 minutes. Mix batter using about 1 cup of corn starch and sart with 1/2 can or bottle of beer. Dip slices of tofu in batter and fry until lightly browned. Serve with sauce drizzled over pieces. You can also fix some thinly sliced sweet potatos and or green beans using the batter.
