3 Cheese Chicken Penne Pasta Bake

Prep Time:20 min | Total Time: 43 min | Makes: 4 servings
Ingredients:

* 1-1/2 cups multigrain penne pasta, uncooked
* 1 pkg. (9 oz.) fresh spinach leaves
* 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
* 1 tsp. dried basil leaves
* 1 jar (14-1/2 oz.) spaghetti sauce
* 1 can (14-1/2 oz.) diced tomatoes, drained
* 2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
* 1 cup KRAFT 2% Milk Shredded Mozzarella Cheese, divided
* 2 Tbsp. KRAFT Grated Parmesan Cheese

HEAT oven to 375oF. Cook pasta as directed on package, adding spinach to the boiling water for the last 1 min.

COOK and stir chicken and basil in large nonstick skillet on medium-high heat 3 min. Add spaghetti sauce and tomatoes; bring to boil. Simmer 3 min. or until chicken is done. Stir in Neufchatel cheese.

DRAIN pasta mixture; return to pan. Stir in chicken mixture and 1/2 cup mozzarella. Spoon into 2-qt. or 8-inch square baking dish.

BAKE 20 min. Sprinkle with remaining cheeses. Bake 3 min.




Green Chile-Chicken Casserole


1 1/3 cups fat-free, less-sodium chicken broth
1 cup canned chopped green chilies, drained
1 cup chopped onion
1 cup fat-free sour cream
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
2 (10 1/2-ounce) cans condensed 98% fat-free cream of chicken soup, undiluted (such as Campbell's)
1 garlic clove, minced
Cooking spray
24 (6-inch) corn tortillas
4 cups shredded cooked chicken breast (about 1 pound)
2 cups (8 ounces) finely shredded sharp cheddar cheese

Preheat oven to 350°.
Combine the first 9 ingredients in a large saucepan, stirring with a whisk. Bring to a boil, stirring constantly. Remove from heat.
Spread 1 cup soup mixture in a 13 x 9-inch baking dish coated with cooking spray. Arrange 6 tortillas over the soup mixture, and top with 1 cup chicken and 1/2 cup cheese. Repeat layers, ending with the cheese. Spread remaining soup mixture over cheese. Bake at 350° for 30 minutes or until bubbly.

Yield: 12 servings (serving size: about 3/4 cup)



Mexican Chicken Casserole



Vegetable oil cooking spray
1 (10 3/4-ounce) can cream of chicken soup
1 (10 3/4-ounce) can cheddar cheese soup
1 (10 3/4-ounce) can cream of mushroom soup
1 (10-ounce) can tomatoes
1 small can green chilies
1 teaspoon cayenne pepper

1 whole chicken, cooked, boned, and chopped or 4 cups leftover cooked chicken
1 (11 1/2-ounce) package flour tortillas
2 cups shredded Cheddar

Preheat the oven to 350 degrees F. Spray a 13 by-9-inch pan with the cooking spray.
In a large bowl, stir together the 3 kinds of soup, chilies, cayenne and the tomatoes. Stir in the chicken.
Layer the tortillas and the chicken mixture in the pan, beginning and ending with tortillas. Sprinkle the cheese over the casserole and bake for 30 minutes.




Spanish Chicken and Rice Casserole
Ingredients
1 1/4 C. long-grain rice, preferably brown
1 small onion, chopped
1 Tbs. extra virgin olive oil
1 can (14.5 oz.) stewed tomatoes
1-1/4 C. canned low-sodium chicken broth, divided
1 tsp. paprika
1/2 tsp. dried oregano
1/2 tsp. freshly ground black pepper
1 jar (7 oz.) roasted red peppers, drained and chopped
2 medium (about 1-1/4 lbs.), skinless, boneless chicken breasts cut in 1/2" pieces
1 bay leaf
1/2 C. frozen green peas
Salt and freshly ground black pepper, to taste
Directions
Preheat oven to 375 degrees. In a 2-quart casserole, combine rice, onion and oil. Mix in tomatoes, 1-C. broth, paprika, oregano, ground pepper, roasted peppers, chicken and bay leaf. Cover casserole and bake 30 minutes. Stir in peas and add an additional 1/4 C. broth, if needed, to keep rice from sticking. Bake until rice is tender and chicken is cooked through. Remove bay leaves, add salt and pepper to taste, if desired, and serve.

Makes 6 servings.



Chicken stir fry- this was rated moderately easy

ingredients
1 tbsp olive oil
? shallot, peeled and sliced
? red pepper, sliced
? chicken breast, sliced
pinch chilli flakes
1 tbsp honey
1 tbsp soy sauce
1 tbsp sesame oil
? lime, juice only
? pak choi, sliced
1 tbsp cornflour, mixed with water
110g/4oz egg noodles, cooked
sesame seeds, to serve
Preparation method
Heat the oil in a large frying pan or wok. Sauté the shallot, pepper and chicken slices for a few minutes, until the chicken is browned.
Stir in the chilli flakes, honey, soy sauce, sesame oil, and lime juice. Stir-fry for a few minutes.
Add the pak choi and pour in the cornflour and water mixture. Heat gently for another 3-4 minutes, stirring occasionally, until the chicken is cooked.
Add the noodles and warm through.
Transfer to a serving bowl and sprinkle with sesame seeds to serve.

CELESTIAL CHICKEN CASSEROLE
1 can mushrooms
3 c. cooked chicken
2 pkgs. slivered almonds
3 c. cooked rice
1 1/2 c. mayonnaise
2 cans cream of chicken soup, undiluted
1 lg. onion, chopped
8 oz. cheddar cheese, shredded
3 c. corn flakes, crushed
2 tbsp. sesame seeds
Mix first 7 ingredients. Place in large buttered casserole. Top with shredded cheese. Put crushed corn flakes mixed with sesame seeds over cheese. Bake at 350 degrees for 35 to 40 minutes or until bubbly and top is slightly browned. Makes 1 large or 2 small dishes.



Chicken and rice pilaf, you can research a recipe for it on google.

Chicken and rice asian style casserole also. You just boil rice separate, then mix rice, some chopped veggies, add either sweet and sour sauce or soy sauce, add chicken and stir fry for 15 minutes. You can opt out the sauce for a bland taste of butter and add some choice spices of your own.



Blend shredded or diced cooked chicken with a can of Campbell's cream of chicken or mushroom soup, undiluted; a can of Chinese vegetables; a splash of soy sauce and top with Chinese fried noodles, toasted almonds or your sesame seeds. Bake or microwave long enough to blend flavors and heat through.



Just buy a packet Chicken Casserole mix, they are very good and so easy. Add some curry powder if want to boost the flavour and add a little heat.
