What's your favorite quinoa dish?

Looking for some good recipes for quinoa! Yep that's it! =)

On another completely different note..I recently started drinking hemp milk, brand is living harvest.. it blows soy milk out of the water..(so to speak haha) as far as I'm concerned. Each serving also contains 900 mg of omega-3 and 2.8 grams of omega-6! plus lots of other good stuff =) Anyone else use hemp milk regurally or like it?

I got this recipe from Alexandra Jamieson and I LOVE IT!

Quinoa with Winter Veggies
Serves 4

1 c. quinoa, rinsed and drained
2 c. vegetable stock
pinch of sea salt
light sesame oil
6 slices fresh gingerroot, cut into matchsticks
3 shallots, minced
1 tsp. each dried marjoram and thyme
1 carrot, diced
3 celery stalks, diced
3 parsnips, cut into thin diagonal slices
1 red onion, thin half moon slices
2 red bell peppers, thin strips
Juice of 1 lemon
Soy sauce

Preheat oven to 400F. Combine quinoa and stock in a saucepan and bring to a boil. Add salt, cover and cook over low heat until all the stock is absorbed, about 20-25 minutes. Fluff with a fork and set aside. Heat ? tsp. of the sesame oil in a skillet over medium heat. Add ginger, shallots and herbs. Cook, stirring, until the shallots are translucent. Add carrot and celery and cook, stirring, until the vegetables are tender, 3-4 minutes. Remove from heat and stir in lemon juice. Mix into quinoa and set aside. Lightly oil a baking pan or shallow casserole dish. Arrange remaining vegetables in the pan and drizzle with ? cup sesame oil and 3 Tbsp. soy sauce. Roast, uncovered, until vegetables are tender and lightly browned, 20-25 minutes. To serve, arrange a layer of roasted vegetables on individual plates and top with equal servings of the quinoa salad. Serve hot.

My favorite is the kind my boyfriend makes for me. The kind I dont have to cook, but get to enjoy eating!

SWEET QUINOA PUDDING

2 c. cooked quinoa
1 c. apple juice concentrate
1/2 c. raisins
1 c. chopped water chestnuts
1 1/2 tsp. vanilla extract
Grated zest of 1 lemon
Pinch of ground cinnamon
1 kiwi fruit for garnish

In a medium saucepan, combine quinoa, apple juice concentrate, raisins, water chestnuts, vanilla, lemon zest, and cinnamon. Cover pan and bring to a boil, then reduce heat and simmer for 15 minutes.
Slice kiwi fruit. Divide pudding among 5 dessert dishes and top with kiwi fruit slices. Makes 5 servings

I keep hearing everyone rave about hemp lately. Hemp seed butter, hemp flour, hemp oil, and now hemp milk. I haven't seen a single hemp product in my local vegetarian market. I need to start a list of things they should start carrying (they don't have Celebration Roast or Red Star Vegetarian Support yeast, either).

As for quinoa, I was just telling my mother in law today about quinoa and how she should buy some and experiment since I've never done anything with it. I'm not very adventurous when it comes to grains. I'll be looking forward to everyone's suggestions...

Portobellos Stuffed w/ Lemon Scented Quinoa and Arugula

Prep time: 30 minutes | cooking time: 20 minutes | makes 4

Serve on a bed of arugula to make a perfect appetizer for an Italian meal. Try to find mushrooms who's caps curve to form a cup, and I find that ones that are on the smaller side work best.

Equipment:

Ingredients
4 Portobello mushrooms, caps washed and stems removed, trimmed and thinly sliced
1/2 cup dry quinoa, washed
1 cup water
2 tsp olive oil, plus extra for brushing the mushrooms with
1 medium yellow onion, chopped small
3 cloves garlic, minced
1 tablespoon fresh thyme (or 1 tsp dried)
1/2 tsp dried marjoram
1/2 teaspoon salt
Fresh black pepper, to taste
1 cup vegetable broth or water
1/4 cup chopped parley
1/2 cup nutritional yeast flakes
1 scant teaspoon lemon zest (a couple of brushes with a grater should do)
Juice of 1/2 a lemon
1 1/2 cups arugula, chopped into bite size pieces
Fresh parsley for garnish


Directions
Preheat oven to 425

Cook quinoa with 1 cup of water in a small pot, bring to a boil then cover and simmer over low heat until soft, about 15 minutes.

Meanwhile, Heat olive oil in medium saucepan low-medium heat, add onions and sliced mushroom stems, sauté onions until translucent (3-5 minutes).

Add garlic, salt, black pepper, thyme and marjoram, sauté until the garlic if fragrant (about 2 minutes).

Add vegetable broth, turn heat up to medium, let simmer 5 minutes.

Add nutritional yeast and parsley, stir until all nutritional yeast is absorbed, and add lemon juice and lemon zest.

Turn the heat off and set aside.

Brush or spray with olive oil and sprinkle with salt. Line them gills up, in a baking pan, and place in oven for 5 minutes.

Meanwhile, pour 1 cup of the nutritional yeast sauce into the quinoa and combine well. Add the arugula and mix until the arugula is well distributed. Remove mushrooms from the oven and fill them equally with the mixture. Put them back in the oven for 30 minutes.

Remove from oven and reheat the remaining sauce. Chop some parsley for garnish. Place each mushroom on a bed of arugula and drizzle sauce over each mushroom. Garnish with Parsley and serve.

A SOUTH AMERICAN FAVORITE

1 teaspoon ground turmeric
1 teaspoon dried thyme
? teaspoon salt, divided
1 pound boneless skinless chicken breast halves, cut into 1-inch pieces
(To turn this into a classic Peruvian dish, substitute a guinea pig . . . for real)
2 tablespoons olive oil, divided
1 large green bell pepper, seeded and chopped
1 medium onion, chopped
1 cup uncooked quinoa
1 cup chicken broth
1 cup unsweetened coconut milk
1 teaspoon curry powder
? teaspoon ground ginger

Preparation:
1. Prepare a simple tomato-apricot (or mango) chutney; set aside.
2. Combine turmeric, thyme and 1/4 teaspoon salt in shallow dish. Dip 1 chicken piece at a time into spice mixture, coating all sides; set aside.
3. Heat 1 tablespoon oil in heavy, large skillet over medium-high heat. Add bell pepper and onion. Cook and stir 2 minutes or until vegetables are crisp-tender. Remove from skillet with slotted spoon; set aside.
4. Add remaining tablespoon oil to skillet. Add chicken or g/pig pieces. Cook and stir 5 minutes or until browned and no longer pink.
5. Rinse quinoa in small strainer under cold running water; drain well.
6. Combine quinoa, chicken broth, coconut milk, curry, remaining 1/2 teaspoon salt and ginger in heavy, large saucepan. Bring to a boil over high heat. Reduce heat to low; simmer, covered, 10 minutes.
7. Stir in chicken or guinea pig and pepper mixture; cook 5 minutes or until liquid is absorbed. Serve with tomato-apricot (or mango) chutney. Garnish with red chili pepper, if desired.

Great with chicha de jora as a beverage . . . Finish with lively conversation, a good cigar (women in SA enjoy them as well) and a nice "digestif ".

Screw the hemp milk ... it makes a great emetic.
