Answers:
Ground Beef and Salsa Stuffed Potatoes

Ingredients:
4 large russet baking potatoes (the larger the better!)
1 lb ground beef
1 medium onion, chopped
1 tablespoon fresh minced garlic
Seasoning salt (can use white salt)
Pepper
1 small green bell pepper, chopped
1/4 cup grated Parmesan cheese (or to taste)
1 1/4 cups prepared salsa (can use a bit more)
2 cups grated cheddar cheese (or to taste)
3-4 green onions, finely chopped
Sour cream

Steps:
1. Bake the potatoes for about 1 hour at 400 degrees or until the potatoes are tender.

2. Meanwhile in a skillet cook the ground beef with onion, garlic and green bell pepper until ground beef is no longer pink (about 10-12 minutes) drain fat.

3. Add in the Parmesan cheese and salsa; continue to cook for another 3-4 minutes.

4. Season with salt and pepper.

5. Cut the potatoes in half lengthwise and fluff up the pulp with a fork.

6. Place potatoes on a baking sheet.

7. Season pulp with salt and pepper.

8. Spoon equal amounts of ground beef mixture on top of each potato.

9. Top with cheddar cheese and green onions.

10. Return to oven for 5-10 minutes or until the cheese has melted.

11. Serve with sour cream. Delicious!

SHEPHERDS PIE

1 lb. ground beef
1 medium onion, diced
1/3 c. sugar
8 medium potatoes
2 c. shredded sharp cheddar cheese

Boil potatoes, mash and season to taste with milk and butter.
Brown ground beef and onion with salt and pepper. When cooked, add peas, corn, sugar. Let simmer until heated through.

In 13x9 pan place meat and vegetable mixture in bottom of pan. Cover with mashed potatoes and sprinkle cheese on top.

Place in oven on BROIL until cheese is bubbly or light brown.

EASY GROUND BEEF AND POTATO CASSEROLE

1 lb. ground beef
Salt and pepper to taste
1 sm. onion, sliced
4 med. potatoes, sliced
1 green pepper, sliced
1 can cream of mushroom soup

Brown ground beef with salt and pepper in skillet, stirring until crumbly; drain. Place in one quart casserole. Layer next three ingredients over ground beef. Top with soup. Bake covered, at 350 degrees for one hour or until potatoes are tender.

DEVILED GROUND BEEF ON MASHED POTATOES

1 lb. ground beef
1/2 c. chopped onion
3 tbsp. flour
1 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
1 c. water
1 tbsp. Worcestershire sauce
1 tbsp. catsup
4 c. hot mashed potatoes

In large skillet cook beef and onion until meat is brown and onion is tender. Sprinkle with flour, salt, mustard and pepper. Stir in water, Worcestershire sauce and catsup.
Cook and stir over medium heat about 5 minutes or until sauce thickens and comes to a boil. Serve over mashed potatoes.

VELVEETA? Tex-Mex Beef and Potatoes
1 lb. ground beef

1 medium red or green pepper, chopped (about 1 cup)

1 medium onion, chopped (about 3/4 cup)

1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix

1/2 cup water

4 cups frozen Southern-style hash brown potatoes (cubed, not shredded, variety)

1 pkg. (10 oz.) frozen corn

1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up

BROWN meat with peppers and onions in large skillet on medium-high heat; drain. Return to skillet.

ADD taco seasoning and water; stir until well blended. Stir in corn and potatoes; cover. Reduce heat to medium; cook 5 to 7 min. or until potatoes are tender, stirring occasionally.

STIR in VELVEETA; cook until completely melted, stirring occasionally.
