Okra in Tomato Sauce
Do not cut off too much of the stem end; if you do, the okra collapses and the gooey seeds come out.
ingredients

* 1/4 cup plus 2 tablespoons extra-virgin olive oil
* 2 large onions, thinly sliced
* 4 garlic cloves, minced
* 2 pounds small okra (see Note), trimmed
* One 28-ounce can whole tomatoes, drained and chopped
* 3 tablespoons fresh lemon juice
* 1 teaspoon sugar
* Salt and freshly ground pepper
* 1/4 cup coarsely chopped flat-leaf parsley

1. Heat the olive oil in a large enameled cast-iron casserole. Add the onions and cook over moderately high heat, stirring occasionally, until golden, about 6 minutes. Add the garlic and cook until fragrant, about 3 minutes. Add the okra and cook over moderate heat, stirring, until well coated with the flavorings, about 5 minutes. Add the tomatoes, lemon juice and sugar and season with salt and pepper. Simmer over moderately low heat, stirring occasionally, until the okra is tender and the sauce is thickened, 15 to 20 minutes. Stir in the parsley and season with salt. Serve hot, warm or at room temperature.

Vegetarian burger patty. Soak dry beans overnight. Put in blender with onion garlic and salt. Put in bowl. Mix with flour to make a patty. Fry until brown.

Vegetarian Magazine has great recipes. I admit I do eat meats in a limited quantity. Bean soups and brown rice are great and also lentils and barley are great too. Just soak the beans for 4 to 8 hours before cooking. Or you set a crockpot on medium and have supper within 8 hours. Just season to taste and a little olive oil will help with flavor and avoid sticking. Make sure you get home in time.

check for a magazine called "vegetarian times" I used to get it and it was so valuable..so many wonderful stories and information about where to get foods you need and places to eat...who specialize in vegan eating. Plus many great recipes..you might try and do a yahoo search for it on the internet...good luck and happy healthy eating!

Melanzane alla Parmigiana
(Parmigiana Aubergines)


Ingredients
1 egg
125g/4oz plain flour
150ml/5fl oz water
pinch of salt
olive oil for frying
1 aubergine, thinly sliced
300ml/10fl oz tomato passata
125g/4oz pecorino cheese, grated
1 bunch of basil, chopped




Method
1. Prepare the batter by mixing the egg, flour, water and a pinch of salt. Chill in the refrigerator until ready to use.
2. Heat a good slug of olive oil in a pan.
3. Take each aubergine slice, dip in the batter then fry until golden and crispy on both sides. Arrange on kitchen paper to absorb excess oil.
4. Preheat the oven to 180C/350F/Gas 4.
5. Pour some of the passata into an ovenproof dish to cover the bottom.
6. Cover this in a layer of aubergine, then another layer of passata.
7. Next, layer a sprinkling of pecorino cheese, basil, mozzarella and seasoning to taste.
8. Continue layering in this fashion, finishing with a layer of aubergine, passata and pecorino. Bake in the oven for 20-30 minutes.


If you don't eat eggs or if you don't want to fry them, you can grill aubergines after having floured them.

Almond Loaf

Delicious served with mixed vegetables on the side.

* 2 large onions
* 1/3 cup oil
* 3 oz spaghetti
* 1/2 cup whole-wheat breadcrumbs
* 2 cups ground almonds
* 2 eggs, beaten
* 1 tsp sage
* Rind and juice of 1 lemon
* Salt and pepper

Peel and slice the onions and fry in the oil for 10 minutes over a low heat. Cook the spaghetti until tender, but not overcooked. Drain the spaghetti, and add the remaining ingredients. Stir and put into a greased loaf pan. Cover and bake at 375F for 1 hour.





Portobello Tacos

* 2 cups chopped Portobello mushrooms
* 1 cup chopped broccoli
* 1/2 cup chopped carrots
* 1/2 cup sliced onion
* 1 teaspoon olive oil
* 1 cup chopped lettuce
* 1/3 cup chopped tomato
* 1/2 cup guacamole (optional)
* 4 - 6 flour tortillas

Fry up the onions, mushrooms, broccoli, and carrots in olive oil. When cooked to tenderness, remove and make up tortillas with veggies, chopped tomato, lettuce, and guacamole. Tortillas may be warmed up ahead of time in the microwave or on a stovetop pan.

Vegetarian Pasta

INGREDIENTS:
Shell pasta - 3 cups
Potato - 1 (peel and dice)
Carrot - 1 (peel and dice)
White onion - 1 (peel and chop)
Canned tomatoes - 1
Green peas - 1 cup
Olive oil - 1 tbsp
Minced garlic - 1 tbsp
Salt and pepper - add to taste

HOW TO MAKE IT:
Boil the shell pasta and potato until soft.
Then drain the water.
Heat a sauce pan to medium high, and cook the garlic, carrot, onion, green peas, olive oil, salt and pepper.
Cook until carrots are soft.
Add in tomatoes, bring to a boil, and add in the pasta. Mix, and cook for another 3 to 5 minutes, and its ready to serve.

Fried "Chicken"
Serves 4

INGREDIENTS:
1 teaspoon salt
? teaspoon onion powder
1 teaspoon pepper
1 teaspoon garlic powder
2 cups unbleached white flour
4 tablespoons nutritional yeast (optional)
3 tablespoons yellow mustard
? cup water
2 tablespoons baking powder
1 lb. mock chicken (try Worthington Chic-Ketts or White Wave wheat meat)
3? cups vegetable oil

HOW TO MAKE IT:
Mix together the salt, onion powder, pepper, garlic powder, flour, and nutritional yeast in a deep bowl. In a separate bowl, dilute the mustard with 1/2 cup water. Add 1/3 cup of the flour mixture to the mustard mixture and stir. Add the baking powder to the dry flour mixture and mix.

Dip chunks of the mock chicken into the mustard batter, then drop each chunk into the flour mixture and coat with the desired amount of "crust." Fry the chunks in hot oil on medium-high heat in a large skillet or deep fryer until crispy and golden brown, turning as needed.

Serves 4

INGREDIENTS:
1 large, ready-made Pizza Crust
1 can Pizza Sauce (or Spaghetti Sauce)
1 small, Red Onion
1 Green Pepper
1 can Mushrooms
? cup Parmesan Cheeze (see recipe below)

HOW TO MAKE IT:
Preheat oven to 350 degrees. Cut onions and green pepper into thin slices. Spread the pizza sauce evenly on crust and then add the sliced vegetables. Sprinkle the parmesan cheeze on top and bake for 11-15 minutes.

Variations: You can substitute the vegetable or add more. Good toppings are banana peppers, olives, pineapple, and imitation pepperoni slices.

Parmesan Cheeze:

INGREDIENTS:
1 cup Nutritional Yeast
? cup raw, blanched Almonds
? teaspoon salt

HOW TO MAKE IT:
Blend all ingredients in a food processor until the almonds are finely ground. S prinkle over spaghetti, salad, and anything else. Store in sealed container in t he refrigerator.

Goulash...A box of elbow macaroni noodles boil until soft...put some butter in a pan and add onions,garlic,green pepper sautee then add to macaroni noodle and tomato paste add some salt and pepper and cheese if u like cheese....Or u can broccoli cassarole...Buy some fresh broccoli boil it but not to soft then add it to a baking dish then add milk and valvetta cheese and bake..Then when its almost done either add some crushed up crackers or frenchs onion on top and bake a few more mintues..very good..U can also make a cassarole use..A pack of egg noodles boil until done then add cream of mushroom soup and cream of celery and only a 1/2 can of cream of onion soup it pretty over powering if you use more then that add some corn or peas to it thats dinner its self and very filling..Hope this helps..
