Grill chef position entails...what?

I am applying for a job today and I wanted some advice from someone in the biz and to generally brush up on the area. I wanted any info that I could use to impress the chef I will be talking with about anything relating to the position. Even including general tasks and info about the job.

Quite a lot for a job most people think is "simple". I've been in the kitchen biz for about 16 yrs, road houses high class, etc...
The best quality you can have is eagerness to succeed, confidence, a neat and clean appearance, wear a hat, know when food is cooked as requested (well done steaks will be sent back to you if they are requested rare). Be ready for pressure, if the place you're applying is a busy one. Be ready for the temperature around a grill to be more than warm, be ready to clean, check the grease trap under the grill, lots of cooks ignore them and cleaning it shows ur enthusiasm, when u go for the application, be honest about yourself with a flare of salesmanship about it. After the interview, don't wait for them to call you back, take the initiative, and call them urself. most people hiring use that as a screen and wont call you back even if they say they will, it's a test on how bad do you want the job? Be congenial, remember you're working for the public. Be willing to do prep work, chopping onions and stuff. You need to think on your toes, act fast and act efficiently. Have a good taste for food. if you love it, you tend to cook it better. Be willing to learn and don't think you're always right. the smartest people in the world are the ones that think they dont know it all (they are still able to learn)there's more but if you get that far your in the door. It entails long hours, hot working conditions, frequent skin burns, and stress.

Depending on your duties, you will also need to know the differences in cuts of meat, proper holding temps (temperatures), proper cooking temps, cutting styles. You will need to be fast, you will need to be good, and you will need to be sanitary doing it. But no, a grill cook doesn't need a lot of actual cooking skill...

It's also one of the more fun cooking jobs I had. Good food, on time, every time, cooked to perfection (I was a baker working on the grill?!?) and we could make the flames leap almost to the top of the hood range...

Depending on your fire suppression system, I don't reccomend making the 4 feet fire jets we did...

A grill chef is simply that....you will be responsible for cooking on a grill. It could be a flat grill but if it is a nicer restaurant it is probably an open flame grill. Besides cooking on it you will also be responsible for keeping it clean. You will probably be cooking mostly meats. You will also be responsible for prepping the food you will use for your shift. I found if I very lightly prepped the food with a tiny bit of oil there was never any sticking to the grill. The important thing to remember is try not to turn the meat over more than once. But be sure to reposition it so you have nice grill marks. Good luck!
