I need a good simple recipe for buttermilk pancakes?!

Question:

I need a good simple recipe for buttermilk pancakes?

Does anyone have one from an old family recipe?

Answers:
Here ya go, one of my favorites! I use this basic recipe in all of my cookbooks. This version is from Checkered Flag Cooking - Good Luck! - Kent "The Deck Chef" Whitaker

2 cups self rising flour
1 egg
1/3 cup sugar or equivilant in sweetner (equal etc)
1/3 cup oil or melted butter
2 tablespoons French Vanilla Creamer
Butter milk.

Combine all ingredients except butter milk. Stir in buttermilk in 1/3 cup amounts until you have a thick batter, almost cake like. Allow flour to rise a bit or thicken for about five minutes.

THEN Add more Milk as needed. You want a thick batter. Spoon onto hot griddle and smooth out quickly. Allow to rise, look for bubbles, flip once, cook till golden and serve!

Two eggs
two cups of milk(soured) or buttermik

one tsp of baking powder
pinch of salt6 tbs of melted butter or bacon drippings

For fabulous pancakes use buckwheat flour! Old Mill still makes the flour, just use buttermilk instead of milk.
