hmmm... I think because sour milk has bad bacteria in it so it stinks and makes you sick. While cheese is made with specific enzymes which make it yummy.
sour milk is not cheese.........sour milk is decaying milk, chese is made with bacteria and it is not rotting.
Sour milk is spoiled - cheese is treated with cultures.
Same goes for yogurt.
