BUFFALO CHICKEN SALAD


A hot and spicy sauce combined with blue cheese to create the flavors of this salad.


Preparation time: 15 min Cooking time: 5 min
Yield: 6 servings


Dressing Ingredients:
1/2 cup LAND O LAKES? Sour Cream
1/2 cup crumbled blue cheese
1/4 cup mayonnaise
1/4 cup milk
1/4 teaspoon pepper
1/8 teaspoon salt


Salad Ingredients:
1 cup sliced yellow summer squash
1 cup cherry tomato halves
1/2 cup baby carrots, cut into quarters diagonally
1 (10-ounce) bag (6 cups) fancy mixed salad greens
1 rib (1/2 cup) celery, cut into thin strips


Chicken Ingredients:
2 tablespoons LAND O LAKES? Butter
2 tablespoons firmly packed brown sugar
1 pound boneless skinless chicken breast halves, cut into 1/4-inch strips
2 tablespoons prepared Buffalo wings sauce*

Combine all dressing ingredients in small bowl; mix well. Cover; refrigerate until serving time.

Toss together all salad ingredients in large bowl. Set aside.

Melt butter in 10-inch nonstick skillet until sizzling; stir in brown sugar and chicken strips. Cook over high heat, stirring occasionally, until chicken is no longer pink (3 to 5 minutes). Add Buffalo wings sauce; continue cooking until sauce is reduced and chicken is coated (2 to 3 minutes).

To serve, arrange salad mixture on individual plates; top with chicken. Drizzle with dressing.

*Substitute 1 tablespoon hot pepper sauce.

Recipe Tip
Purchased blue cheese or ranch salad dressing can be used.

Here's one of my favourites:

Macaroni Cheese

8 oz cooked macaroni (half the box! - al dente)
? cup of butter
Medium onion, diced
(4-5 strips of bacon cut to about ? inch - use microwaveable - optional)
1/3 cup flour
2? cups milk
1 tsp English mustard powder
About 3 cups of grated cheddar, divided
Breadcrumbs (optional)
Sliced tomato (optional)

Sauce
Melt butter in a pot over a medium heat and add the onion. Cook until transparent. Add the bacon. Take off the heat and mix in flour (until it forms a ball) and stir in milk gradually with a whisk.

Return the pot to the heat and bring to a boil, stirring constantly. Reduce heat and simmer for a few minutes. Add the mustard and salt and pepper and whisk in two cups of cheese (or more to taste). When it’s blended well, add in the cooked macaroni and transfer to a large dish or 9x13 pan. Top with the remainder of the cheese and sprinkle with breadcrumbs. Top with sliced tomato.

Place under the broiler until cheese is bubbly.
