Stuffed Cabbage is great & very cheap. You can make a meal for 20 people for less than 20 bucks & it freezes great.

Stuffed Cabbage: makes about 20 rolls
One large head of cabbage (cut out the core & steam until the leaves are pliable but a little firm.
1-1 1/2 pounds of lean ground meat
1-1 1/2 cups of cooked rice cooled
1 small can of tomato paste
salt, pepper &garlic to taste
2- 3 large cans of tomato sauce (I like a lot of sauce)
Mix raw ground meat with cooled rice, salt pepper, garlic & tomato paste. Take about 1/4 to a 1/2 a cup of meat mixture (depending on how large your cabbage leaf is). Place it in the middle of the leaf, fold up the sides & then roll up like a burrito. Placed seam side down in a deep casserole dish. repeat until all of the large cabbage leaves are used. Shred the rest of the cabbage & sprinkle it on top of the rolls & the cover with tomato sauce, salt, pepper & garlic. Last, bake at 350 for about 1 - 1 1/2 hours.

Double it for more than 10 people or freeze it for another meal if cooking for a family of 4.

You won't believe how good this will be. Even as a child when I didn't like cabbage this was a great dish.

Hot dogs and chli umm if u are talking about a whole family meal. i would say meat loaf with potatoes.

any ground meat seasoned and mixed with rice is yummy cheap and will last 4-5 days cooked in the fridge,soup,american chop suey which is pasta tomato sauce with veggies ussually onion and peppers and ground beef chicken turkey or pork.pasta is very cheap and can reheat well if you sprinkle it with water and olive oil when reheating in a fry pan,beans of any kind.

Take a slice of bread, pure olive oil, salt and lemon juice!! OK. Kidding. You can find recipes from all around the world in local magazines or internet.

I do this once a week at my house to save money. On Sunday we go grocery shopping and I buy a large (6-7 lbs) whole chicken. I roast it whole either that night or Monday night, and we have roasted chicken for the first meal usually with rice and veggies.

The next day I pull the remainder of the meat off the carcass and use it for the next few days worth of meals (there are millions of meals that can be made with left over pulled chicken, and if I don't feel like using it right away I wrap it really well and save it in the freezer for when I do want quick chicken).

I boil all the bones and skin for several hours with whatever I stuffed the chicken with when I roasted it (usually a few cloves of garlic) to get a nice thick stock. The stock is used for everything from soups and pot pies, to boiling rice and making chili.

All in all one $5 chicken lasts my family about a half a week in dinners! That is just pennies per plate, literally, and soooo much easier for me than defrosting frozen meat every single night, or remembering to use what's in the fridge.

Chicken with Apricot, Maple and Mustard
8-10 bone-in chicken pieces

1/3 cup apricot jam
1/3 cup Dijon mustard
1/3 cup maple syrup (or honey says the recipe)
1/4 cup white wine
1 tsp dried tarragon or sage
paprika to taste (we like lots!)

Preheat the oven to 350.

Put your chicken parts in a baking dish. Mix up the sauce and pour over the chicken, turning the chicken pieces to coat. End with the chicken skin side up, then sprinkle paprika over the chicken.

Bake until done, about 45 minutes to an hour depending on which chicken parts you used.

Creamy Lentil Soup
1 Tbs oil
1 cup chopped carrots
1 cup chopped onion
1 cup dried lentils
1/2 cup rice
1/2 tsp salt
1/2 tsp cumin
1/2 tsp black pepper
36 ounces broth (turkey, chicken, or vegetable)
8 ounces tomato sauce
2 cups low fat or skim milk

Heat the oil over medium heat and cook the carrots and onion 5-10 minutes, stirring.

Add the lentils, rice, salt, cumin, pepper, broth, and tomato sauce. Bring to a boil, stir, cover, reduce heat, and simmer 45 minutes--until the lentils are tender.

Use a hand immersion blender to blend the soup or transfer it half at a time into your food processor or blender and blend a bit. I personally like it to still be a bit chunky so I didn't make it totally smooth.

Stir in the milk and heat over low until warmed through.

Cranberry Pot Roast
1 beef roast
1 onion, sliced
1/3 cup Catalina or French salad dressing
1 can jellied cranberry sauce
2 Tbs butter, softened
2 Tbs flour

Trim the fat from the roast and put in the crockpot. Put the onion slices on top of the roast. Mix together the cranberry sauce and dressing and pour over the roast. Cover and cook on low all day, until done. (Or cook half the day on high.) Remove the roast from the crockpot.

Mix together the butter and flour and whisk into the gravy. Turn the crockpot on high and cover for 10 minutes or so. Slice the roast in 1/4 slices and serve with the gravy.

Note: Instead of an onion, you can use a packet of dried onion soup. If you don't have the dressing, you can skip it.

Chicken Quesadillas
Diced cooked chicken
chili powder
garlic or garlic powder
leftover broth or water
flour tortillas
Cheddar cheese or a Mexican blend
sour cream
salsa
In a small pan, mix the cooked chicken with some chili powder and garlic. Optionally, if you have some taco seasoning mix you can use that instead. Add some water or broth, just enough to make everything moist without being too soupy. Bring to a simmer, cover, and let it heat through, stirring now and then. In the meantime, grate some cheese.

You can bake these quesadillas or heat them in a frying pan with a bit of butter on the outside surfaces. If you're going to bake them, preheat the oven to 450. Set the tortillas on a baking pan, spread the chicken mixture across the tortilla and sprinkle with cheese. Top with another tortilla, then bake for 5 minutes or so.

If you don't want to bake, spread one side of the tortilla with butter and lay in a warm frying pan or on a griddle. Spread the chicken mixture over it, sprinkle grated cheese on top, and place another tortilla on top. Spread butter over it as well. Cook a few minutes until the cheese is melted and the outside of the tortilla is a lightly browned. Carefully flip it over and cook the other side.

Cut into wedges and serve with sour cream and salsa on the side. Refried beans make a nice side dish, of course.

Hamburger Stroganoff
1 pound ground beef or turkey
1 tbs. butter or oil
1 onion, chopped
1 clove garlic, minced
1 can cream soup (mushroom or chicken)
1/2 cup water
salt and pepper to taste
1 cup sour cream, optional

Heat the oil or butter and sauté the onion and garlic until soft. Add the meat and brown, then drain of any extra fat.

Add the soup, water, salt and pepper and heat through.

Remove from the heat and stir in the sour cream if you're using it.

Serve over rice or egg noodles.

Indian cuisine can be very economical to make. There's lots of recipes based on lentils, rice and potatoes. But you may need to ask if there's another name for the ingredient -- for instance they say "chick peas" we say "garbonzo bean".

preheat oven to 400
you will need: 1 cup shortning
1 and 1/2 cup sugar
2 eggs
2 and 3/4 cup flour
2 tsp. cream of tatar
1 tsp. baking soda
1 quarter tsp. salt

for the coating you will need
2 tbs sugar
2 tsp cinnimmon

directions:
mix shortening and eggs in big bowl. And smaller bowl add sugar, flour, creating of Tartar, baking soda, and salt. Make sure not to use cinnamon or sugar. Mix everything together. Roll dough into balls. Mix sugar and cinnamon together in small bowl. Roll balls into sugar, cinnamon mix. Put in a oven for 8 to 10 minutes.

2 porkchops
1 Can cream of mushroom soup
1 can Milk
1 small onion (optional)
1 can mushroom pieces (optional)

Brown chops in skillet. Pour soup in pan, fill can with milk and add to soup. Stir well with fork. Place chops in pan. Cover with onions and mushrooms (optional). Cover pan with foil and bake at 275 degrees for about 2 hours. Can make more chops by just adding 1 can soup and milk for every 2 chops.

These come out very tender and you can use the soup mix for gravy on some mashed potatoes.

Try foodnetwork.com and look at Dave Lieberman's recipes. He touts himself as on a tight budget and his recipes are quick and simple. Also, Robin Miller on the same network does wonderful things with one type of meat/fish that she multiplies out to last 3-4 meals!

Personally, anything with pasta and chicken does wonders. Try my rosemary/lemon chicken.

4 boneless chicken breasts grilled or seared
1 pkg sliced mushrooms
3-4 lemons for fresh juice
fresh rosemary sprigs - 5-6, dried in microwave for 15 seconds
2 cloves garlic, diced/minced
8 oz chicken stock
1/2 tbs cornstarch
frozen broccoli florets
1 lb bow tie pasta (farfelle)

Season chicken breast with rosemary and lemon juice. Let stand 10-15 minutes. Grill or sear until golden brown. Slice grilled chicken into bite-size strips. Season with more lemon juice and rosemary leaves.

Defrost broccoli and dress with lemon juice.

In deep skillet melt butter and saute mushrooms. Add diced garlic until soft and tender. Add chicken stock. Mix cornstarch in with 1/3 cup of cold water until soluble. Add to mushroom/stock mixture. Squeeze the juice of two lemons into mixture. Let simmer for 10 minutes.

Add broccoli florets and chicken strips. Let simmer for another 15 minutes.

Cook pasta as directed on box. Drain pasta and pour chicken mixture over pasta. Toss. Sprinkle with more lemon juice.

Serves about 6

goulash
hamburger meat - 2 lbs-scrambled, seasoned to your taste and drained
chopped onion cook with meat
elbow macroni - 8oz cooked and drained
hunt's diced tomatoes -roasted garlic-2 14.5 oz cans
tomato sauce- 8oz can ( unless you like really tomato flavor add another can)
whole kernel corn frozen 6 to 8 oz (optional)

after the meat and noodles are cooked and drained add all ingredients together and heat all the way through
serve with garlic toast or plain bread, salad or favorite green veggie


homemade vegtetable soup w/ hamburger meat
hamburger meat- 1lb- seasoned to your taste, scrambled and drained.

green beans-frozen
whole kerenal corn - frozen
carrots - fresh
celery -fresh
tomatoes- canned- roasted garlic
tomatoe sauce -8 oz can
onions-quartered
fresh garlic- 2 pieces chopped
beef boullion - cubed or liquid
water
seasoning -seasoning salt,lemon pepper,
nature seasonings
mix all ingredients in large soup pan and cook over medium heat until all veggies are tender

poor man's spaghetti and meatballs
vermicelli- amount it takes for your family, - cooked and drained
hamburger meat - 2 to 3 lbs, season with seasoning salt, lemon pepper, natures seasoning, and lots of garlic powder, (to your taste), roll into balls ( your choice on size), fry in skillet until done , drain.
tomatoe sauce - 2 or 3, 32 0z cans

in large pan combine tomatoe sauce and meatballs heat until tomtoe sauce is hot all the way through
you can add spaghetti to sauce or serve seperate and let everyone put their on sauce on spaghetti
serve with garlic toast and salad or fried potatoes (thats what my mother-in-law did)
