slightly more upscale cuisine, usually drawing on inlfuences of multiple regions- mediteranean, asian-fusion, latin. sometimes restaurants use this in reference to molecular gastronomy- the science and art of food chemistry- where they deconstruct dishes and play with dry ice/flavored foams and mousses, to combine flavors. there are a lot of cool molecular gastronomy videos on youtube fyi- kinda neat to watch.
