Question: What pasta dish is this called? What is one without pasta sauce?
it looked like she used fresh tomatoes or canned diced tomatoes..not the pasta tomato sauce...she put boneless chicken breast which was bland but the pasta tasted pretty tasty.......I don't have basil in my house....I want to try to make pasta without the pasta...you know the prego and ragu kind of sauces.....

It appears that you're describing "Pasta De Checca"

Click below for the picture and recipe. In place of the shaved Parmesan cheese, consider substituting it for fresh slices mozzarella*** (toss in slices of fresh mozzarella after you've tossed in the tomatoes).

NOTE: Gotta have the fresh basil and everything else which brings out the flavor for this dish. Without it, it's bland (don't use dried basil)

This could be so many Italian dishes that it is really hard to say. If possible, just ask her what she cooked.

Here is a really basic pasta sauce recipe using fresh tomatoes. You can build on it and add what you want like garlic, basil, oregano, mushrooms, etc.

Ingredients

?2 pounds, fresh, ripe, plum tomatoes, peeled, seeded, and chopped (or 3 cups canned, whole, peeled tomatoes, with their juice, chopped)
?6 Tbs butter (unsalted)
?1 medium sized onion, peeled and cut in half
?salt
?4 Tbs of Parmigiano-Reggiano cheese
?1 pound of pasta
Directions


1.Put all the ingredients, except the cheese, in a saucepan and simmer over a low heat until the tomatoes have reduced and separated from the butter. This will take about 20-40 minutes depending upon the size of the pan.
2.While the sauce is cooking bring 4 quarts of water to a boil in a large pot, add 1 tbs of salt, and drop in the pasta all at once, stirring until the pasta is submerged. If you have a smaller pot, you can use less than 4 quarts of water, but you must constantly stir the pasta for one minute.
3.When the sauce is done remove it from the heat. Discard the onion.
4.When the pasta is cooked al dente, drain and toss with the sauce and grated cheese.

To help out with the flavor of the chicken breasts this time, slice them, and season them overnight in the fridge. Cook them in a skillet with olive oil before you add them to the sauce.

Also, you can use olive oil instead of butter in the sauce recipe. (I prefer it, but you may like the butter better.)
