Garden Grilled Cheese Sandwiches

Yield: 4 sandwiches

8 teaspoons Dijon mustard
8 (1-ounce) slices sourdough bread
1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese
1/2 cup drained canned artichoke hearts, sliced
1-1/3 cups sliced bottled roasted red bell peppers
Cooking Spray

Spread 2 teaspoons mustard on 1 bread slice; top with 1/4 cup cheese, 2 tablespoons artichokes, 1/3 cup bell peppers, and 1 bread slice. Repeat procedure with remaining mustard, bread, cheese, artichokes, and bell peppers. Heat a large nonstick skillet coated with cooking spray over medium heat until hot. Add sandwiches to skillet; cook 2 minutes on each side or until golden brown. To flatten the sandwiches as they cook, place another skillet on top of them.


CHICKEN SALAD WRAPS
This recipe is in the category of those that are excellent and very easy to assemble.
2 (10 ounce) cans chunk chicken, drained and flaked
1/4 cup chopped onion
1/4 cup mayonnaise
4 tablespoons fresh salsa
salt and pepper to taste
6 (10 inch) flour tortillas
12 lettuce leaves

In a small bowl combine the chicken, onion, mayonnaise, salsa, salt and pepper. Mix together. Line each tortilla with two lettuce leaves, then divide chicken salad mixture evenly among each tortilla and roll up, or 'wrap'.


TURKEY WALDORF SANDWICH

3/4 c Mayonnaise
1/3 c Chopped celery
1/3 c Chopped walnuts
1 ts Lemon juice
Lettuce
3/4 lb Sliced turkey
Apple slices

Combine mayonnaise, celery, walnuts, and lemon juice. Layer lettuce,
turkey, apple slices, and mayonnaise mixture between toased bread.

MY FAV::Chicken Ceasar Salad Wraps - and are easy to make!
Thaw, cut into bite size pieces a couple of chicken breasts. Cook on skillet until no longer pink - few mins - add little salt n pepper.
Buy the salad mix prewashed, or put a salad together with leftover veggies. Add in large bowl.
Add your favorite ranch (you could try another dressing).
If you'd like i crunch some croutons into the bowl for added crunch.
Then sprinkle in your fav shredded cheese.
Mix all ingredients and cooled down cooked chicken in bowl.
Heat up a few torillas, wrap em up and tada...
All you cook is the chicken :)

for lunch a peanut butter and raspberry jam sandwich is my favourite

ramen noodles (you don't need the flavor packet.)
2 tbsp peanut butter
2 tsp soy sauce
sesame seeds
(opt. chopped scallions on top)
(opt. a splash of sesame oil)

while boiling the noodles mix the peanut butter, soy sauce, and sesame seeds. If you have to, soften the pb in the microwave. Drain the noodles and mix them in. It's a nice, quick asian fix that i love for breakfast and lunch.

SOUTHWEST SPICY FISH SANDWICH

4 6 oz. tilapia filets
4 large sesame seed buns
4 large leaves romaine lettuce
4 oz. cheddar cheese
4 tbs. chipotle mayonnaise
mayonnaise
chipotle peppers in adobe sauce
1 tbs. soft butter
1 tbs. Emeril's Southwest Seasoning
2 tbs. extra virgin olive oil

Heat olive oil on medium high in a large frying pan. Sprinkle tilapia filets liberally with Emeril's Southwest Seasoning. When oil is hot, add filets. Cook 3 minutes on each side. Remove fish to a plate.
Slice cheese into thin slices. Make chipotle mayonnaise (see recipe below).

Heat grill pan to medium high. Lightly butter the buns and grill, buttered side down until browned. Add thinly sliced cheese to the bottom of each bun. Melt the cheese under a broiler or toaster oven and remove from oven. Add a fish filet to each bun. Place a romaine lettuce leaf on top of the fish. Add 1 tablespoon of chipotle mayonnaise to each bun top and place the bun on top of lettuce.



Chipotle Mayonnaise:

Put one 7 or 8 oz. can of chipotle peppers in adobe sauce in food processor. Pulse until peppers are well chopped. Add 3 tablespoons of the chipotle sauce to 1 cup of mayonnaise. Freeze or refrigerate remaining chipotle sauce. Refrigerate remaining chipotle mayonnaise for more sandwiches later!
