The other important thing is the fresh veggies. Markets offer cheap options with huge selections. :)
I love this website: http://www.allrecipies.com . I go there to learn how to make stuff I've had in restaurants sometimes. Don't be afraid to try substituting stuff if a particular ingredient is expensive!!
Being a poor (but not starving) student ;).
Sushi is very simple to make and a lot of fun.
Pho (a Vietnamese soup) is one of the tastiest foods EVAR and it has this wonderful smell when it's cooking.
Curry is fun and delicious to make, and although Indian Style gets the press around here, Thai Red Curry is super delicious and Jungle Curries really add some zing to your diet.
Won Tons are another great one, steam them, fry them, pan sear them, they're delicious all around.
All those are wonderful.
However, if you really want a masterpiece, something that will knock it straight out of the park and leave everyone in awe, may I suggest the mother of all delicious foods.
Peking Duck
Yes, it takes a day to make. Almost all of that time is just drying the thing out and you can expedite that with clever use of a box fan in a cool room. It's a little ambitious, it's amazingly delicious, and no, it's not THAT hard to make. Admittedly, you need a duck and some people think they're too cute to eat. I say FI on them. Ducks are vermin, delicious, delicious vermin.
I cooks for a living. Boomicus.
I love cooking easy Japanese food. Some of my favourite easy to cook Japanese dishes include vegetable tempura, karaage (Japanese fried chicken), nikujyaga (meat & potatoes) and miso soup. See the link below for the easy to cook recipes.

Chinese pork fried rice and Yang zhou fried rice.

For Chinese pork fried rice, soy sauce is optional. For Yang Zhou fried rice, shrimp is optional. You could substitute char-siu with diced ham or shredded pork. Yang Zhou fried rice do not contain any soy sauce.
Tonkatsu. http://stephenhawker.com/tonkatsu.jpg
If panko is not available, you could make your own by using homemade croutons. The difference between panko and crushed/shredded croutons made out of white toast - panko is coarser (larger chunks). You don't even have to make your own tonkatsu sauce out of ketchup, worcestershire sauce and mirin. A1 steak sauce got a rather similar taste. If you don't like pork chop, you could use chicken instead.
Potato Korokke. Recipe: http://japanesefood.about.com/od/potato/…
Omurice. This recipe used no mirin/sake/dashi: http://japanesefood.about.com/od/rice/r/…
All items listed above used easy to find, readily available ingredients. They are also inexpensive and easy to make. You don't have to go out and get things like soy sauce, mirin, or dashi for any of the dishes mentioned above.
A cheap and easy recipe is Fried Rice; only takes about 30 minutes and uses meat, rice, onion, green bell peppers, celery and eggs. Besides the soy sauce, that is. But, you can also try for Stir-Fried Chili Beef or even Spicy Shrimp Stir-Fry
Today I made SUSHI! It was so good and while it does take some practice, patience, and a couple out-of-the-ordinary ingredients.... It was fun and A LOT cheaper than going out!
