this recipe has sauerkraut in it but it is absolutely delicious:
3/4 cup sugar
1/2 cup oil
1/4 cup vinegar
1/2 tsp. celery seed
1/4 tsp. whole mustard seed
1 can (17oz) whole kernel corn, drained
1 can (16oz)sauerkraut, pressed to remove excess liquid
1/2 cup chopped green pepper
1/3 cup chopped onion
combine sugar, oil, vinegar, celery seed and mustard seed in medium serving bowl. Stir until sugar dissolves.Add remaining ingredients. Mix well. Cover and refrigerate at least 8 hours or overnight. Drain and stir before serving.

CORN RELISH

1 (12 oz.) can vacuum pack yellow whole kernel corn, undrained
1/4 c. sweet pickle relish
1 tbsp. pimento, diced
4 tsp. vinegar
1 tbsp. sugar
1 tsp. salt

Mix canned corn with pickle relish and pimento. Combine remaining ingredients thoroughly, pour over corn relish mixture. Chill several hours, stirring occasionally. Serve on relish tray or as an appetizer. Yield: 1 3/4 cups relish.

Here ya go, straight from my new cookbook. I also did this recipe on NBC the other day.

1 can whole kernal corn drained
1 can black beans rinsed and drained
1 can diced tomatoes drained
1 small chopped onion
1 bell pepper chopped
Hot sauce to taste
1 halve packet taco seasoning.
Mix all, stir and chill for about 10 minutes.
Add garlic and other spices as desired,,,, if needed.

Quick, easy and perfect with chips etc!

If you wanted to get crafty, brown the corn in the oven for a few minutes under broil. ROASTED CORN SALSA!

This is a southern Louisiana dish, we eat it with rice. It's not really a relish, but it could be. It's delicious. In a small pot, add a couple of teaspoons of oil, add a small chopped onion about 1/4 cup and about the same amount of chopped green bell pepper and cook until it is wilted. Then add a 1/2 can of tomato sauce and 1/4 can of diced tomatoes, let this simmer for about 1/2 hour. Then add a can of whole kernel corn and whatever spices you like. Also put 2 tablespoons of sugar and let it cook for about another 15 mintues. You can spice this up by adding some chopped up jalapeno's if you like. (If you want a creamy relish, use one can of creamed corn and one can of whole kernel). This is really good.
