Why is Palermo's cuisine so renowned in Italy and especially in Sicily?!


Question: Why is Palermo's cuisine so renowned in Italy and especially in Sicily?
Is it because of the grilling?

Answers:

Remember Sicily was run by the Romans, Greeks, Moor's, Libyans, French and many other marauding civilizations over the century's so of all the regions of Italy it has a more diverse cuisine, plus with so little arid land to grow things they subsist on the all the local foods, fish and seafood's around the island, like in the north were rice and polenta are served, Sicilian pastas are not are heavy and rich as the mainland, so it is like any country, there cuisine is based on what is available, the land and sea around it and finally there history over the century's from the people who live there and governed them in those times.



Again. Who says it is? I live in Italy and have Never heard this said.
