Shrimp kow got anther name - stir-fried shrimp with mixed vegetables. Typical vegetables used were broccoli, sliced carrots, zucchini, water chestnuts, baby corn and celery. Fancier ones might use snow peas, baby corn, and asparagus. Do not confuse this dish with shrimp gao or har-gao. Gao = dumplings. Kow = ball. It was called shrimp kow because peeled shrimp with a deep cut on the back will curl up and look like a ball when cooked.

Vegetable delight also got another name - stir-fried mixed vegetables. The ingredients vary from restaurant to restaurant. Typical vegetables used were broccoli, baby corn, mushrooms, sliced carrots, snow peas, and zucchini. Fancier ones might also contain "black Chinese fungus" (a crunchy black mushroom usually found in hot and sour soup), straw mushrooms, sliced bamboo shoots, shiitake mushrooms and asparagus.

I haven't heard of those fancy names since who knows when. I am a little surprised that those old names were still in use somewhere. LOL
