Spinach quiche is sort of a meal by itself. I would serve some red grapes for a little color. Put them in the fridge so they are nice and cold. That's all you really need. Sorry I can't join you -- it sounds good.

It's nice to serve or accompany your quiche with baby mixed greens with light touch of vinaigrette dressing.

If a baby mixed green salad doesn't work, consider some fruits such as grapes, melons strawberries and/or blueberries.

Other option is a bowl of soup.

Many restaurants serve their quiche with either salad or a nice variety of fruit.

You could serve some salmon either grilled or smoked salmon as a side dish. You could also fry up some bacon rashers as they would go nicely with spinach. Roast chicken would be nice too and finally you could serve a salad of whatever you fancy. It really depends how many people you are cooking for as to what to serve with it. If it was only one or two people you should keep it simple and just serve a salad

You need some contrasting colour, texture, or flavor.
I'd suggest halving some tomatoes, sprinkle with Parmesan,
broil in the oven until golden on top.

Patricia's right, grapes are really all you need. But if you wish for more; tapenade with toast points would accompany the quiche quite well.
