how do i make chinese resturant style chicken fried rice and fish sauce?!


Question: How do i make chinese resturant style chicken fried rice and fish sauce?
this is kind of a two part question, first I would really like to know how to make chicken fried rice the way chinese restaurants make it, I've tried soy sauce, oyster sauce, doing it up with the egg, green onion, peas and frying it all but its just not the same, any suggestions? or recipes?

also vietnamese fish sauce !!! I'e been told its sugar vinegar water and fish oil but i cant get the proportions right !!!!! any good restaurant recipes out there?

heat oil in pan.
add chopped garlic.
add chicken.
add 1tbsp oyster sauce.
add mixed veggies (peas, carrot, corns).
add one portion cooled rice.
add salt and white pepper.
add a few drops sesame oil.
add scrambled eggs (previously cooked).
voila!

cooking class.



I know to make good fried rice that you need to use leftover rice, not newly cooked. It holds the shape and flavors together better or something like that.



Just go to a Chinese restaurant!!!!
