Low Fat Chicken Cajun
* 2 green onion, slice
* salt, sugar, cajun seasoning, ground pepper, and MSG, as desired
* 2 chicken boneless breasts, wash clean, cut cubes,
* 1 medium eggplant, cut cubes
* 1 medium red capsicum, slice
* 1/2 - 1 medium onion, slice
* 1 cup tofu already cut cubes
* 1 block of Chicken Bouillon
- Heat the pan, no adding vegetable oil at all, when the pan getting hot, place chicken, tofu, and the vegetables into the pan and stir well in medium hot, until water comes out from tofu and chicken.
- Add the chicken bouillon, stir well
- Add the rest of the ingredients until cooking reach your tastebud.
Low Fat Strawberry Tart
1 cup all-purpose flour
1/2 tsp. salt
1/4 cup margarine, chilled and cut into small pieces
3 Tbs. cold water
1 1/2 cups firm silken tofu, drained well
1/2 cup sugar
1 tsp. vanilla
2 cups sliced strawberries
1/2 cup strawberry preserves
1. Preheat oven to 375?°F. In food processor, combine
flour and salt and pulse on/off to mix. Add margarine
and process until mixture resembles coarse crumbs.
With machine running, add water, 1 Tbs. at a time, and
process until dough forms a ball. Turn dough out onto
lightly floured work surface. Roll dough into a
10-inch circle. Place dough inside 9-inch tart pan.
Prick bottom of pastry several times with fork. Bake
until just lightly browned, 10 minutes. Remove to wire
rack to cool.
2. Reduce oven temperature to 350?°F. In food
processor, combine tofu, sugar and vanilla and process
until well blended. Pour mixture into cooled tart
crust. Bake until filling is set, about 30 minutes.
Remove to wire rack to cool.
3. To serve, arrange sliced strawberries on top of
tart in a circular pattern until entire surface is
covered. Puree preserves in blender or food processor
and brush over strawberries. Chill at least 1 hour
before serving.
Baked Doughnuts (low fat)

2 cups buttermilk baking mix
1/2 cup granulated sugar, divided
1/4 teaspoon ground nutmeg
1/2 cup low-fat sour cream
1 large egg, lightly beaten
1/4 teaspoon ground cinnamon
Directions
Preheat oven to 425°F. Spray baking sheet with cooking spray. Mix baking mix, 1/4 cup sugar and the nutmeg in medium bowl until well blended. Stir in sour cream and egg.
Place dough on lightly floured surface; knead 10 times. Roll dough to 1/2-inch thickness. Cut with floured 2-inch doughnut cutter. Repeat rolling and cutting with dough scraps until all of the dough is used. Place doughnuts, in single layer, on prepared baking sheet.
Bake 10 to 12 minutes, or until golden brown. Mix remaining 1/4 cup sugar and the cinnamon in shallow dish; set aside. Spray both sides of doughnuts with cooking spray. Add to sugar mixture; turn to evenly coat both sides.
Low Fat Peach Cobler
Peach Crumb Cobbler
2 cups fresh peaches, sliced
1/3 cup graham cracker crumbs
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons low?calorie margarine
Preheat oven to 350°F. Place the sliced peaches in the bottom of an 8 x 8 x 2?inch baking pan. In a small mixing bowl, combine the graham cracker crumbs, cinnamon and nutmeg; mix well. Gradually blend in margarine and sprinkle mixture over peaches. Bake uncovered for 25 to 30 minutes. Remove from the oven and let cool slightly before serving.

CHICKEN NUGGETS WITH HONEY MUSTARD
SAUCE
8 oz. chicken breast halves, skinned, boned and cut into bite sized pieces
1 tbsp. olive oil
1 clove garlic, minced
3/4 c. bread crumbs, finely ground
1/4 tsp. each garlic and onion powder
1/8 tsp. ground pepper
1/8 tsp. cayenne pepper
1 egg mixed with 1/2 tsp chicken bouillon
SAUCE:
1 tbsp. Dijon mustard
1 1/2 tsp. honey
Preheat oven to 475 degrees.
Beat egg and mix with chicken bouillon.
Combine chicken, olive oil, garlic and ground pepper. Marinate 30 minutes.
Combine bread crumbs and seasonings in shallow dish. Dip chicken in egg and rol in breadcrumb mixture; place on large cookie sheet. Spray with olive oil.
Bake 15 minutes.
Meanwhile, combine honey with mustard.
To serve, dip nuggets into sauce
CORN-BREAD TOPPED PORK CASSEROLE
olive oil
1 medium onion, diced
2 garlic cloves, minced
2 pounds pork pieces, cut into 1-inch chunks
1 28-ounce can whole tomatoes
1 4-ounce can chopped green chilies, drained
1/2 cup water
2 teaspoons brown sugar
salt
1/2 cup all-purpose flour
1/2 cup cornmeal
2 tablespoons sugar
1 1/2 teaspoons double-acting baking powder
1/3 cup milk
1 egg
2 HOURS BEFORE SERVING:
In a large skillet over medium heat, sauté onion and garlic until tender in 2 tablespoons olive oil. Using a slotted spoon, remove onion mixture and set aside.
In the drippings remaining in pan, sauté pork chunks over medium to high heat until well browned.
Return onion mixture to pan. Stir in tomatoes (with juice from can), brown sugar, green chilies, water and 3/4 teaspoon salt.
Bring to a boil, stirring to loosen brown bits from bottom of skillet.
Spoon pork mixture into a deep 2 1/2-quart casserole dish. Cover casserole and bake at 350°F for 1 hour.
Corn-bread topping:
5 minutes before pork is done, prepare topping.
Combine flour, cornmeal, sugar, baking powder, and 1/4 teaspoon salt in a medium bowl. Whisk in milk, egg, and 2 tablespoons olive oil just until blended.
Remove casserole from oven. Pour off or skim excess fat from liquid in casserole. Spread corn-bread batter evenly over top of pork mixture in casserole.
Bake for 20 minutes or until golden and toothpick inserted into corn bread comes out clean.
Serve immediately.
8 servings.

I bet you can't even fit one bum cheek on the toilet seat without spilling it all over the floor! It's frightfully tedious the way this fat nation continues with life... people like you say eurgh! to anything healthy thats why i'm getting this perfectly valid idea you need to lose wait!

My son is a big sphagetti freak. So I use plain diced tomatoes instead of the sauce, then vary the meats. Sometimes I'll fry & drain hamburger, sometimes chicken pieces & sometimes shrimp. He loves it.
For dessert he likes angel food cake with fresh strawberries cut up and no or low calorie sweetner added.
You can also make sugar free jello pudding with skim milk & freeze into popsickles. It's hardly any calories or fat at all.
Even the things you don't like are easier to eat if you know there's a treat afterwards. There are all kinds of places on the web offering fat free receipes for free.
