Sashimi is the raw fish slices. It's amazingly good. Sushi can be raw or cooked fish or even chicken, tofu, or vegetables served with rice. Part of the meaning of the word "sushi" is "with rice," so that's where that comes from.
Congratulations on getting the gift certificate. Japanese is my favorite type of food! Try the gyoza appetizer.
