As you correctly mentioned that it's all different in different region, there is no single dish that has got the honour of being a "National Dish"
There are couple of lines that divide the Indian Food Habit.
1. Bread Eaters of the North vs Rice Eaters from the South and East
2. Coconut based cooking from the South and Coastal region vs the Ghee and Mustard Oil based cooking from North and East
3. And finally the great divide of the meat and fish eaters vs pure vegans
Surprisingly, one element is common in all and that blures the divides, that is a Daal or Lentil.
You will get Daal in all form and in all regional variation.
Having said that, my suggestion would be to include a Daal recipe. For westerner, Garbanzo Beans would be easy to get and write/cook. You can also choose Kidney Beans that is also very popular.
If you would like to give it a regional touch, you can choose "Sambar" from south or "Daal Makahni" from north.
