Muffins

Definitely muffins. And one of my favorite types of muffins is banana nut. Here is a great recipe for them. I usually don't use the coffee that the recipe suggests. They are delicious without it.

3 or 4 ripe bananas, smashed
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 Tbsp espresso or strong coffee (optional)
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour
1 cup chopped walnuts (toasted or raw)

No need for a mixer with this recipe.

1 Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.

2 Mix in the sugar, egg, espresso and vanilla.

3 Sprinkle the baking soda and salt over the mixture and mix in.

4 Add the flour, mix until it is just incorporated. Fold in the chopped walnuts.

5 Pour mixture into a prepared muffin tin. Bake for 25-30 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it's done. Cool on a rack.

Makes 12 muffins.

It's a hard choice! how about some cookies........or maybe both

HERMIT COOKIES

1 1/3 cups brown sugar
1 cup butter or Crisco
3 eggs
1 teaspoon baking soda
1/2 teaspoon nutmeg
2 1/2 cups flour
1 cup raisins
1 cup currants
1/2 cup hot water
1 cup chopped nuts

Combine brown sugar, butter or Crisco, 3 eggs, baking soda, nutmeg, and flour in bowl.
In a small saucepan, combine raisins, currants, hot water, and boil five minutes. Cool, and then add to above mixture. Stir in chopped nuts.

Drop in spoonfuls onto greased baking sheet and bake at 300° about 15 minutes or until done, which varies according to the size of the cookie created.


MUFFINS

1 egg
3/4 cup milk
1/2 cup vegetable oil
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt

Heat oven to 400 F. Grease bottoms only of about 12 medium muffin cups, 2 1/2 x 1 1/4 inches.
Beat egg stir in milk and oil. Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy). Fill muffin cups about 3/4 full.

Bake until golden brown, about 20 minutes. Immediately remove from pan. About 1 dozen muffins.

Blueberry muffins: Stir in 1 cup fresh or 3/4 cup frozen blueberries (thawed and well drained) with the milk.

Oatmeal-Raisin muffins: Stir in 1 cup raisins with the milk. Decrease flour to 1 cup; stir in 1 cup quick-cooking oats, 1/2 teaspoon ground nutmeg and 1/4 teaspoon ground cinnamon with the flour.

Definitely cookies! These are the best chocolate chip cookies.

Ingredients:

? 1 1/2 Cups Flour
? 1 Teaspoon baking soda
? 1 Teaspoon cinnamon
? 1 Cup butter softened
? 1/2 Cup light brown sugar
? 1 Cup sugar
? 1 large egg
? 1 Teaspoon vanilla extract
? 1 1/2 Cup old fashioned rolled oats
? 1 Cup semi-sweet chocoalte chips





Chocoalte chip cookies

Preparation:

1) Mix together flour, baking soda, and cinnamon.

2) Beat together butter, brown sugar, sugar, at medium speed until its light and fluffy. Then beat in egg and vanilla.

3) At low speed, beat in flour mixture until well blended. Fold in oats and cholate chips. Cover with plastic wrap, chill for 1 hour.

4) Pre-heat oven to 350 degrees. Grease 2 baking sheets.

5) Shape dough into 1 inch balls. Place cookies 2" apart on the greased baking sheets. Faltten each cookie slightly.

6) Bake cookies until lightly browned around the edges, about 10-12 minutes. Let cool slighlt then transfer to wire racks to cool completely.

You can make the dough ahead of time and freeze it.

Makes 4 dozen.

oh deffo choc chip cookies!

cookies, chocolate chip are always yummy. i get the recipe from the pack of the package of chocolate chips, and then add a touch of cinnamon and walnuts.

Cookies - stick with a classic - Chocolate Chip!

Try these ... it's a great easy recipe .... I cut the recipe in half a lot of times but it still makes several dozen cookies ... I've also left the nuts out or the Hershey bar and it's still good ... these are really good with coffee for breakfast!

NEIMAN-MARCUS COOKIES (Recipe may be halved)
2 cups butter
24 oz. chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8-oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
Measure oatmeal, and blend in a blender to a fine
powder. Cream the butter and both sugars. Add eggs
and vanilla, mix together with flour, oatmeal, salt,
baking powder, and soda. Add chocolate chips, Hershey
Bar, and nuts. Roll into balls, and place two inches
apart on a cookie sheet.

Bake for 10 minutes at 375 degrees. Makes 112
cookies.

Award Winning Soft Chocolate Chip Cookies
INGREDIENTS:
4 1/2 cups all-purpose flour
2 teaspoons baking soda
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages instant vanilla pudding mix
4 eggs
2 teaspoons vanilla extract
4 cups semisweet chocolate
chips
2 cups chopped walnuts
(optional)

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
2. In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3. Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.
