Question: What is the black outside when you eat sushi?
Hi, I went to a buffet the other night, and had some California Rolls and Crab Rolls. For sushi in general, what is the black outer thing? Thank you.

Hahaha. The nori is usually referred to as pressed seaweed, but it's actually algae.

Usually roasted, it holds the sushi together and adds flavor. This is basically how sushi is made (see second pic)- with the nori usually on the outside. But it can be just surrounding the filling.



Black on some sushi dishes are squid ink. Seaweed is green. I have seen some dishes that have the black squid ink mixed into the rice turning it black.
