we own a small catering company and recently caterd for 180 people,the main things you gonna think about is
1.make SURE the food is heated and steaming
2.make sure you have enough food for all people,NEVER RUN OUT,MAKE EXTRA
3.have enough staff to serve,bringing out the food is very imoportand
4.speed BE FAST BUT EFFICIENT :)
