What sushi is safe from mercury?!

Question: What sushi is safe from mercury?
I know tuna has some mercury, but how much of it (in sushi) can I eat a week to be safe?

How about Salmon, Yellowtail, Red Snapper, and Eel? and others too if you know

Answers:

Mercury tends to accumulate more in fish meat of fish higher in food chain, in other words, fish in the lower food chain contains less mercury.
Such prey fish as sardine, sword fish, squid, octopus are relatively low on mercury.
Tuna is one of the highest predator in the food chain containing high mercury.
But I hear the mercury level in tuna meat is not so high as to cause any health problems.

You can't leave sushi for more than a week all sushi

But I'll give u a recipe as I am a chef

SIMPLE SUSHI BITES

100-g pkg seaweed (or natural) rice crackers
1/4 cup mayonnaise
2 - 3 tsp wasabi paste
1/2 field cucumber or 1/4 English cucumber
1/2 red pepper
1 tsp black sesame seeds

1. Stir mayonnaise with 2 tablespoons wasabi paste, in small bowl. Add more wasabi if desired. Thinly slice cucumber, and julienne red pepper.

2. No more than 1 hour before serving (or crackers may get soggy) spread mayo/wasabi mixture on crackers, top with 2-3 slices of cucumber, and 1-2 slices red pepper, sprinkle with sesame seeds.

Mayo/wasabi mixture and veggies can be prepared 1 day ahead. Try adding smoked salmon, or tuna. My version is vegetarian friendly. Thinly sliced green onions are also a nice addition to this easy recipe.
