How do you stop malted sugar from sticking to a surface?!


Question: How do you stop malted sugar from sticking to a surface?
how do you stop melted sugar from sticking to a surface?
i want to make caramel decorations but i cant figure out how to stop the caramel from sticking while i make the design..
i read that placing some water on the pan before doing the decoration stops the crystallization and it wont stick...
i thought about serenaded paper.. but it{ll be hard to find here in Mexico.. any ideas besides mine?

2 1/2 cups sugar
2/3 cup light corn syrup
1/2 cup water
Cooking spray

you can also make caramel ribbons by using a long metal spoon and ladeling thin waved of the caramel back and forth over the spoon handle to create long flowy ribbons

you could also use a veg oil or butter to grease a paper or round handle and spiral the caramel arround it so when you peel it off it will look like a spring

also you can use a ladel by sparaying it with oil spray and drizzling sugar mix over it then once fully set peel off and you will have a cage to cover your dessert



maybe you can try parchment paper, wax paper or even some of the cooking sprays like PAM or Crisco cooking sprays.
