Calf's Head
(France) Tete de veau (Calf's Head). A delicacy in France. A British relative living in France raved about it so I ordered it in a restaurant. I was green until the waiter took it away. Basically, the fleshy bits of a calf's head, cooked for a long time and cut into squares, each consisting of a few strings of slimy meat and a 1cm thick layer of fat/gelatinous glop. The brain is served in the corner of the plate.
Camel's Feet
(France) It's not really fair to include this as French, but my favorite recipe from the Larousse Gastronomique is Pieds de chameau a la vinaigrette (camel's feet.) It begins "Soak the feet of a young camel... " You'll find it just before the recipe for camel's hump.
STEAK TARTARE
(France) completely raw beef (avoid the porc tartare!) Also popular in Japan (sesame beef) and many other parts of the world
TRIPE
(France, many others) lining of cow's stomach. Famous recipe from Caen. ... Not particularly French.
Tripe and onions is a traditional British dish, and tripe is an important ingredient in much of the cuisine of Africa (e.g. Fetra Desti).

I've forgotten the name but there is a specific cheese made by using maggots to aid in the "fermenation/aging process" of the cheese. If I am not mistaken, it cannot be transported, sold or consumed in the U.S. because of that. I've been to France a few times, love their cheeses and all the rest of their cuisine...but I think I'll stop at that one.
