Question: How can I prepare and serve Fish & Chips?
I work in a Bar where they tried to copy and I don't know if is the correct way.

Answers:

Take firm, white fish - cod, haddock, or whatever is local to you. Pat into seasoned flour, then dip into a batter. (My Secret Batter Mix: mix a couple cups of flour with beer and seasoning. Aim for a consistency of double/heavy cream). Drop the battered fish carefully into deep oil at 190 degrees. Fry for 4 minutes.
The best chips/fries need the right potatoes. In the UK you can't beat Maris Pipers. In the US, try Idaho Russets. Either way, part-boil the potatoes, then cool. Cut into large chips/fries. Then fry in oil at 180 degrees until golden. The result will be crispy on the outside and mushy in the centre.
