I agree with SHAN, Monterrey jack and SHARP cheddar cheese. I put the Monterrey jack in the actual enchilada and then sprinkle the SHARP cheddar cheese on top with black olives. I wouldn't buy the prepackaged, but I'm spoiled, the cheese just isn't as fresh and sometimes ALL the cheeses end up tasting the same. Take the time to grate a block of cheese, you can always grate them now and put in baggies in the fridge for later when your actually cooking. When melted and cooked Monterrey is really creamy, that is why I put it inside with the enchilada.
Have fun! Experimenting with food is fun, most of the time I make the same recipe and it never comes out the same each time. You may make it this time and realize "oh it would be better with..." or " I added to much of that", etc. Just have fun! If you mess up, just laugh at yourself!

If you can find a cheese called "Queso", it's probably a good choice. You can find it in the refrigerated section of Mexican foods at any grocery store, or at your local Mexican grocer. It's soft, white, and melts beautifully. Don't get "Queso Fresco"! That is a crumbly cheese that will not melt.
