Cheap vegetarian recipes?

something cheap and easy to make. I'm on a very limited budget.

when i'm low on money or don't want to go to the store, i make a box of mexican rice, and add a can of corn and a can of black beans. quick, cheap, easy..... gets the job done.

I have to echo mamabear's answers, though-- I always have quick-cooking rice like Goya mixes or plain old rice, flour and corn tortillas, shredded cheese, lots of pasta and jarred sauce, vegetable broth and frozen vegetable mixes on hand so I can do something up when I'm too tired to go to the store or too poor to create something involving lots of ingredients.

falafel is cheap and easy- and the boxed mixes are actually pretty good and make way more than you would think- a good cheap meal is a salad of mixed greens with a few falafel patties, some toasted pita ( toast your own- the pre-toasted are really expensive) and some hummus. You could add to the salad any veggies you want.

I know it's not soup season, but I like to make soup out of a can of tomato soup, a can of cream of mushroom soup, a can of veggie minestrone soup, a can of green beans, a can of mushrooms, a couple potatoes, a can of corn, some onion and a pack of fake ground meat which has been sauteed. If you shop generic you can do this for about $7 for a pot of soup that will serve about 10 servings.
