Pesto mashed potatoes?!

Pesto mashed potatoes?

I have been craving these green mashed potatoes from the Belagio in Las Vegas. They usually serve it for brunch in the buffet resturant. My memory is kind of vaige cuz i havent gone in such a long time(about 4years) but i still remember those mashed potatoes. They were kind of sweet but delisheous. I think they were pesto mashed potatoes but i dont know . Does anyone have a recipe for them or knows what i am talking about.

Pesto Mashed Potatoes

4 medium russet potatoes, peeled and cubed
1 tablespoon butter
1/4 cup milk, or as needed
1 tablespoon basil pesto (or you can use Knor Creamy Pesto sauce packet)

Place the potatoes into a saucepan with enough water to cover. Bring to a boil, and cook until tender; about 10 minutes. Drain, and mash with butter and milk to your desired consistency. Mix in pesto, and serve.


Garlic & Basil Pesto

3 cups chopped fresh basil
1 cup extra virgin olive oil
1/2 cup pine nuts
1/8 cup Brazil nuts
2/3 cup grated Parmesan cheese
2 tablespoons minced garlic
1/2 teaspoon chili powder

Place the basil in a blender. Pour in about 1 tablespoon of the oil, and blend basil into a paste. Gradually add pine nuts, Brazil nuts, Parmesan cheese, garlic, chili powder, and remaining oil. Continue to blend until smooth.

They are pesto mashed potatos and there are several different ways to make them. You could even just make mashed potatoes and add a container of store bought pesto (about 1/2 cup or so). Mix and let sit for about a minute. Otherwise just make the pesto homemade and add to mashed potatoes. Yummy

Pesto Mashed Potatoes

1 (16 ounce) container refrigerated prepared mashed potatoes
1/2 cup purchased basil pesto
PREPARATION:
Heat potatoes as directed on package. When potatoes are hot, stir in pesto to marbelize, then let stand for 2 minutes before serving. Serves 3-4
