When I cook a brisket, I always start a fire on my grill?

How do you cook one? It is good, but the juices drip down and start a fire.


Answers:
brisket is best cooked slooowly like they do in bbq smokers. if you have a gas grill try cooking it at less then 300o for several hours over indirect heat.

in your oven on a pan... over night.

If possible, put a pan underneath it to catch the drippings.

I've had your problem, and a Brinkman Smoker cures the problem, ther are inexpensive, about 30 bucs, and easy to use, it comes with instructions, you just fire up the grill, soak up some hickory or apple wood and go for it, best 30 bucs I ever spent!

You can also start out with it wrapped, well, in heavy duty tin foil. Seeing as how (in my opinion) brisket is best when cooked over a wood fire, very slowly, you can cook it for quite some time in the foil. Remove it from the foil carefully, trying to save as much as the juice as possible, which you can use to baste the brisket with as it finishes off.

I put my brisket in a slow cooker on the counter and let it cook all day. It has some liquid in it to keep it moist, enough to cover it. Put some onions in it too, makes for a really good tasting meal.
