Question: Do you have a tea cake recipe?
I'm looking for a really good tea cake recipe? For those of you not use to souther cooking a tea cake is more like a cookie than an actual cake. Light on flavor but still delicious. Anyone have a recipe they can share? Thanks.

There's this wonderful recipe for peach tea cake!


2 1/4 cups all-purpose flour
1 tsp baking powder
1 tsp fine sea salt
1 cup sugar
3/4 cup unsalted butter, softened
3 eggs
1 tablespoon pure vanilla extract
3/4 -1 teaspoon cinnamon (optional)
2 1/2 cups coarsely chopped mixed stone fruit, fresh or frozen


Preheat oven to 250F. Whisk the flour, baking powder, and salt together in a bowl. Using a handheld mixer with beaters or a stand mixer with the paddle attachment, cream the sugar and butter together on medium-high speed for 3 to 5 minutes, until light and fluffy. Add the eggs one at a time, scraping down the sides of the bowl after each addition, then stir in the vanilla and cinnamon. Add the flour mixture and stir just until smooth dough forms. Pat into prepared pan and bake for 30 to 40 minutes, or until lightly golden and firm. Cool for 30 minutes before serving.

TEA CAKES WITH BUTTER FROSTING

1 cup butter, softened
2 cups sugar
3 eggs
1 teaspoon vanilla
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoons salt
1 cup buttermilk

Beat together butter and sugar on medium speed until creamy. Stir in eggs, one at a time, beating well after each addition. Add vanilla.
Whish together flour, baking powder, baking soda and salt. Gradually add to the creamed mixture alternating with buttermilk.
Wrap and chill for 1 hour overnight.
On a work surface lightly dusted with flour, roll out to 1/4-inch thickness. Cut with 2-1/2 inch cookie cutters dipped in flour before cutting each cookie.
Using a spatula sprayed with non-stick spray, gently transfer cookies onto a greased cookie sheets placing 1 inch apart.
Bake at 350F for 8-10 minutes or until lightly browned.
Remove to wire racks to cool.

FROSTING

1/2 cup butter, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
3 to 5 tablespoons milk
food colouring, optional

In a mixing bowl, cream butter, sugar, vanilla and enough milk to make a spreadable frosting. Add a drop of food colouring, if desired. Frost the cookies.

Makes about 5 dozen.
