Becuase I don't think a California Roll has seaweed in it...

By definition, sushi is just rice seasoned with rice vinegar. You could even find sushi that was served in a bowl (chirashi sushi). http://edo-sushi.com/order/images/Chiras…

There are different styles of California rolls.

There are California rolls made with the green seaweed wrap around the outside. There are also California rolls with a rice-rolled-in-sesame-seed outside. (Although many have a wrap of seaweed around the veggies in the middle before adding the rice layer.)

And, yes, there are varieties of sushi made without seaweed.
Some with rice paper wraps, some as a block of rice topped in seafood and sauce, some even with no rice, just raw pieces of seafood.
All of these have their own name for not just the style of preparation, but the type of seafood/ingredients found in them.
A good sushi cookbook, or guide, will give you their proper names if you are interested.



The traditional California roll is sort of an inside-out roll where the rice is on the outside and the seaweed is on the inside. So YES a CA roll has seaweed.

The word sushi refers to "vinegared rice".

Not all sushi (vinegared rice) has seaweed.
There are bowl sushi where a bowl of rice is topped with goodies (known as Chirashi-sushi).
Also, there is sushi in tofu pockets (known as Inari-sushi).
Another type is hand-formed sushi where a ball of rice is formed and fish is placed on top (known as Nigiri-Sushi)

Therefore, NOT all sushi has seaweed.



As you can imagine, there are many different types of sushi. Some sushi uses seaweed and some don`t. The traditional or most common sushi in Japan is called Nigirizushi and is basically just fish on a bed of rice seasoned with rice wine vinegar. This is the most commonly eaten sush and is very popular,

Seaweed is dark green and paper like. If there is no dark green paper looking stuff then there is no seaweed.



Most sushi has seaweed in it. That's what keeps it together but some might use rice paper instead.
