Question: Moroccan Cuisine recipes?
I would like to cook a dinner for my boyfriend. He is from Morocco. I want to cook some Moroccan food, any ideas???

I've been there 6 times. The most basic food is tagine, and there are many recipes. Start with something simple like Chicken, onion, and golden raisin. Cut up boneless chicken into chunks and brown in olive oil add the chopped onions and raisins, put some salt and pepper on it and cover tightly, turn down the heat and cook for about 30 minutes. Serve with crusty bread (if you don't have Moroccan bread flat bread or other good chewy bread will work). Salads are also very popular in Morocco, carrot, beet, tomato and green pepper, and chopped salad of cucumber and tomato with olive oil and lemon dressing.

You can also make a meatball and egg tagine, that is pretty easy. And a tomato, onion and egg tagine is easy too. If you dont have a tagine, a very heavy stainless steel pan with a good-fitting lid will do.



I love all things Moroccan too : ) Now I unfortunately do not have a very specific answer for you but I have a suggestion. My suggestion is if you can call the mother, grandmother or sister and ask them. I know this may not be ideal but it does show that you are interested in taking care of him and that is important to old school traditional culture/ families like that ...trust me I know all about old school traditional families, I am hispanic : ) This suggestion though has to be at the discretion of your better judgment though, since I can't specifically advise accordingly because I know nothing of that particular situation.
I am sure that you have looked already on you tube, if not check there it is a great resource.
Chicken tagine is a basic recipe like rice and beans is for hispanics. If you want to do that there are tons of recipes online just type it into a search engine however if you want something More authentic the my first suggestion would be best.
There should be books, and blogs dedicated to traditional / native / authentic moroccan food.
You could check with your local culinary school they sometimes offer weekend cooking classes that focus on specific ethnic foods or you could call the school and ask for the chef instructor and ask that person, they may or may not help you.
It may be worth your while to make a trek out to your nearest moroccan restaurant and see what they have on the menu and weather you like it or not.
You can also explain your predicament to the chef and ask for a suggestion or recipe "they will usually be more than happy to help you " its good customer service"
Just make sure to let your server know that you wish to speak to the chef and when the chef comes out praise his/her work...they love that and then that is when you would ask be sure to have a little note pad and pen handy or if you do not have the guts to make such a public scene you can go to the restaurant with an already prepared note card and while enjoying your meal ask your server to give it to the chef. Like I said before though be sure to praise the chefs incredible / amazing meal...it's the best you ever had! ; )

keep in mind that in morocco they cook differently then we do here, they often don't use conventional ovens and what not but rather clay pots or tagine holder thingys that have fires in them and that is why they use clay cooking tagine, that is also what gives tagine cooked food a distinct flavor... but that is also why I advised you to ask the family because they will tell you exactly how your man ate while growing up : )
Also when you go to buy that serving tagine,
most websites that sell tagines also sell wonderful tagine / moroccan spices. This would probably help you out a bit.
