I discovered this one quite by accident. I didn't have all the ingredients one night and winged it. I turned out good. So this is my meatloaf recipe and you can modify it yourself

In a skillet heat 1 tbsp vegetable oil. add 1 cup finely chopped onion ( I use red), 1 cup finely chopped green pepper, 1 tbsp of chopped jalepeno,1 cup finely chopped celery and 2 cloves minced garlic. Sautee for five minutes and take out and put in a large bowl.
Add two pounds ground beef, 2 large beaten eggs,1 tbsp. flour, 3/4 tsp of salt, 1/4 tsp of pepper to the large bowl with the sauteed vegetables and mix well with your hands. I usually mix 1 cup classico tomato and basil sauce and a 1/2 cup pico de gallo together and pour it onto the meatloaf and then drape it with bacon. You could probably mix this into the mixture and chop the bacon into the mixture. I would probably only put 1/2 of the sauce mixture and bacon and then brush the hamburger with the rest.
This would make a great guacamole burger with pepper jack! yummy!!!

Just make your regular meatloaf and form patties and fry up in a skillet.
I don't necessarily have a recipe for meatloaf, I just mix the burger with breadcrumbs, an egg, ketchup, Worcestershire sauce, seasonings like garlic salt and pepper.
For something different replace the ketchup with pizza sauce and use mozzarella cheese.

dice celery (1 cup), 2 slices of bread (broken), 1 med. onion, small can stems'n'pieces mushrooms, tomoatoes, meatloaf seasonings (comes in a packet), 3 eggs. combine in bowl with 2# ground meat (I like lean ground meat).... grease sides of pan with lard, butter or margarine.... I like using a 2 piece drip pan set, because all the fat drips out to the bottom....

turn oven to 350 deg., put prepared loaf in oven, cook for 50-60 min. .... goes good with cornbread.... you can also make gravy to pour over sliced pieces of meat loaf...

FAMILY MEATLOAF

2 lbs ground round
1 cup bread crumbs or crushed saltine crackers
2 eggs
1 cup Parmesan cheese
1 small onion diced
1 clove garlic crushed
1 pkg meatloaf seasoning mix
1/4 tsp ground black pepper
1 small can tomato sauce

Mix ground beef, bread crumbs, eggs, 1/2 cup cheese, onion, garlic, seasoning packet, and black pepper. Pour tomato sauce over the top and sprinkle with remaining 1/2 cup Parmesan cheese. Place in a loaf pan and bake at 350°F for 1 1/2 hours on bottom rack of oven.

Final internal temperature should be 170°F for ground beef. Ovens vary, so check meatloaf after 1 hour.
