The story goes thusly....there was a restaurant owner in Mexico, a man named Ceasar Cardini, who came up with the salad by necessity, as he experienced a rush at his restaurant and was strapped for supplies. It originally, and sometimes still is, prepared for diners tableside as a flourish.
