Question: How To Make Nigerian Kabab (Suiya)?
I used to live in Nigeria and one of the food I absolutely miss is their Kabab called Suiya in Hausa. These are usually sold in the road side. Does anyone know the recipe? I have searched for this for many years but was not able to find it.

I would let the meat sit in the spice for a few hours in the refrigerator (or overnight) in a covered bowl to marinate. Then you can thread it on a skewer and grill it over a barbeque or you can broil it in your oven. I think it would be good grilled with onion, bell pepper and tomato - or whatever vegetable you like.

In Ghana it is called Suya. You basically need to buy the kebab powder, skewer the beef and marinate it in the powder ( suya) for about 30 minutes, then grill it . When cooked , dip it in more suya before serving!
