Whey powder?!

Question:

Whey powder?

Does all whey power contain rennet?

Answers:
Whey is a biproduct from the manufactuer of cheese. When rennet is added to milk, the four casein proteins coagulate to form curd. The remaining dozen or so proteins remain suspended in water to form liquid whey. When the water is evaporated the whey proteins remain as a powder with any extra rennet.

The good news is that most cheese (and whey) manufactured in the U.S. uses engineered "vegetable rennet" not derived from animal parts. Less than 25% uses traditional rennet from a calf's stomach (mostly for traditional european style cheeses).
