BOSTON MARKET MEATLOAF



1 egg
2 T. sour cream
2 T. ketchup
2 T. flour
1 package of onion soup mix, dry
1 (1 pound) package of ground sirloin
ketchup for coating the meatloaf
1/3 c. spicy V-8 Juice

Into blender put the first 5 ingredients exactly as given. Blend briefly until smooth.

In medium bowl combine with beef. Mix well. Wet hands to shape into oval loaf.

Bake in Pam-sprayed 2 pound, foil, loaf tin at 400° for 45 minutes. After first 15 minutes, coat top in ketchup and add the V-8 Juice around the loaf; return to bake the remaining 30 minutes.

NOTE: If you double the recipe, be sure to double all ingredients and time as well, requiring almost an hour and a half total baking. If you make 2 small loaves, however, you do not double the baking time. (Leftovers freeze well to use in 3 months).

(Makes 1 small loaf and serves 2)

Easy Meatloaf

1-1 1/2 lb ground beef
1 egg
1 breadcrumbs
2 teaspoons water
2 teaspoons garlic powder
1 teaspoon salt

Preheat oven to 325.
Combine all ingredients in medium bowl.
Mix well with hands until thoroughly blended.
Spread into loaf pans- loosely, don't pack too tightly.
Cover with aluminum foil and bake for 45-50 minutes.
Remove foil and bake for an additional 15 minutes until top is brown (raise oven temp to 350 at this point for a crispier top).

Well, you can use other things besides hamburger, like Venison (deer meat) or pork, or ?, but a good lean hamburger is a good start. You can add red and/or green peppers, (sparingly), onion, tomatoes,a 50/50 mix of a good barbecue sauce and ketchup-- and salad croutons, whatever kind you like. As far as quantities of each, well, I don't know. I just mix 'em together 'til it looks and smells GREAT, then cook it.

MARK’S MEATLOAF

1 ? lbs. 90% lean ground beef
2 eggs
2 oz. olive oil plus extra for cooking
6 oz. beef stock plus extra for drizzling
? cup grated Parmesan or Romano cheese
? cup plain bread crumbs
A hefty handful of chopped fresh parsley
Generous sprinkling of kosher salt and black pepper

Mix all of the ingredients in a bowl and place on an oiled sheet pan. Form a uniform rectangle 1 ? - 1 ? inches in height. Place into a 350 degree oven. I remove it when the internal temperature has reached 140 degrees which is medium. Heat the remaining beef stock to a simmer and drizzle over slices of the meatloaf.

I don't have amounts, but I put the following in my meatloaf...

ground meat (can use 1/2 beef 1/2 turkey) try to get meat that is fairly lean unless you use venison, then you'll need a fattier meat to add to it.
onion, minced
garlic powder
salt
pepper
chili powder (or paprika)
tomato paste
fresh egg
bread crumbs (store bought bread crumbs, or grind up your favorite bread croutons)

Mix it all together, very well!!. Place in loaf pan and bake at 375 until done.

breadcrumbs(filler)
seasoning(salt, pepper,onions,garlic,worchesti... sauce,etc.)
Red and green bell peppers(garnish)

Mix it all together and make a mold. The bigger the mold, the longer it takes to cook. Please don't use low fat meat. Dear God please! If you do you will have a dry meatloaf.

1 pound recipe :

1 pound ground beef 20% fat free
1 large egg

Emeril Essence 3 teaspoons
Italian Bread Crumbs 1/2 cup
Sage 1 teaspoon
milk 1/4 cup


Mix on bowl

Bake in Loaf Pan

45 minutes at 325.

My Meatloaf Recipe
2 lbs ground chuck
1 lb mild or hot ground sausage,(raw, not cooked)
1 med bell pepper (chopped)
1 med onion (chopped)
2 slices bacon
1 tbls minced or chopped fresh garlic
1 egg
1/2 cup Italian bread crumbs
Salt, pepper to taste

Sauce to pour over meatloaf;

2 or 3 sm cans tomatoe sauce
1/2 cup chopped onion
1 clove garlic
1/2 cup chopped bell pepper
Salt,pepper to taste
Mix up your ground chuck with the eggs, peppers, onions, bacon, garlic and bread crumbs. split the mixture into 2 equal parts, put one in the bottom of casserole or loaf pan, then put your sausage on top of that, then add the other part of the mixture on top of that. Make sure you shape it good like a meatloaf. Then put your tomatoe sauce in a small saucepan, add onion, pepper, garlic, salt and pepper to taste in sauce and in the meat mixture. cook over low heat until your veggies are tender, then pour over your meatloaf. Cover with foil and bake at 350 for about an hour. Take out, uncover, put back in for about 20 more minutes. Serve with rice. Very good!!!

I have a lot of recipies for meatloaf, but the one I like the best is: 1 and a half lbs. ground chuck or ground sirloin, 1 beaten egg, 1/2 cup chopped onion, 1/2 cup chopped bell pepper, 1 tsp., 1 tsp. dried celery flakes, 1/4 tsp. dried mustard, 1 tbsp. Chilli pwd., 1 tbsp. diced garlic from a jar, 1 tsp. parsley flakes, 1/2 tsp. cajon seasoning, 1/2 cup Itallion seasoned bread crumbs, a dash of cumin powder, salt and pepper to taste. Mix all this up. Then make a topping of 1/2 cup catsup, 1/2 cup water, 1 Tbsp. Worschester sause, 1/2 tsp. hot sauce. Add about 1/4 cup to the meat mixture, mix well. Place in loaf pan or casserole dish. Top with the rest of the sauce mixture. Everyone loves it!!!

1lb ground beef or turkey, if you prefer, 1 med. size onion, 1 lrg egg, 1/2 to 1 cp bread crumbs or saltine crackers, 1tsp salt, 1tsp black pepper, 1 tsp garlic salt, 1 tsp crushed oregano, and for fun, you can add pitted,halved black or green olives. They give your meatloaf quite a punch of flavor!

The basic ingredients for meat loaf are mix 3-4 lbs raw hamburger meat in a large bowl, add 1 whole yellow onion, 2 eggs, and about 1-1 1/2 c. of italian seasoning bread crumbs, also to add a little more flavor add, 1 tsp salt . a few dashes of black pepper, 1 table spoon parsley flakes. and1/2 tsp garlic salt, mix all ingredients by hand, then form the traditionl hill in your pan, but not to high and not to thick, bake in preheated oven 350 about 1-2 hrs time may vary ,but loaf is done when greese runs out of loaf and is clear and meat is golden brown.... most people top with ketchup and bake for another 10 or 15 min.. I do a lot of my measuring by sight and taste so it may vary every time you prepare this dish/ also a few extra ideas w/ the meat loaf you can use the same recipie for meat balls just roll them up and bake the same way except use sweat and sour sauce as a dip. hope it turns out well good luck
