Ingredients
1 can green pigeon peas (goya kind)
2 cups white rice
2 ounces diced smoked ham...A hand full
1 yellow onion
2 tablespoons corn oil or olive oil...whatever you like to use
? cup sofrito
? cup tomato sauce(goya), that's half the can
1 teaspoon salt
1 package of sazon(to give the rice color)
3 bay leafs
1 whole banana leaf(it gaves flavor to the rice)
1 dash of adobo(goya with cumin)
1 dash of black pepper
How to make it

1. Rinse the rice with water and drain well and set aside.
2. In a 4 quart cooking pan, add the oil and smoked ham and the chopped onions simmer over moderate heat for about 3 minutes or into ham and onions are some what cooked/while stirring occasionally
3. Add the sofrito,tomato sauce,sazon,salt,black pepper and the bay leaf simmer for another 3 minutes while continuing to stir.
4. Turn up the heat to moderate high and add the can of beans. Simmer for 3 minutes while continuing to stir.
5.Add the rice and 1 cup of water.
6. Mix all the items well. Once the water starts to boil again, reduce the heat to moderate high and cook uncovered until most of the water has evaporated.
7. Reduce the heat to low, stir the rice again and put the rice in the middle of the pan in a mount then cover the rice with the banana leaf then cover the top of the pot with aluminum foil and put the lid on.
8. Cook for 25 minutes. Stir the rice and flip the top of the rice to the bottom and spread the rice and cover the rice the same way it was continue to cook until done. Sample the rice to see if it is done. It should be soft to chew.

You can go without the banana leaf it's not necessary,and I have omitted many times from these recipe. Enjoy! I'm puerto rican.



I have an easy recipe that turns out better than any rice at a restaurant. This has a really good flavor in the rice and adding in tomatoes, black beans and corn make it a delicious and substantial dish. Of course you can leave out any of the add-ins if you don't like them.

Spanish Rice
1 box Rice a Roni Spanish Rice
1 can diced tomatoes
1 can black beans
1 sm can corn

Prepare the Rice a Roni using the directions on the box. Use the juice off the can of the tomatoes as part of liquid that you add to the rice.

Drain and rinse the beans with water, drain. Drain the can of corn. 5 min before the rice is done stir in the tomatoes, beans and corn. Cook just till the rice is done and serve.

* 12 inch frying pan, with tight fitting lid

* 2 cups long grain white rice

* 1/4 cup canola oil

* 1 yellow onion cut into 1 inch chunks

* 1 bell pepper any color, cut into 1 inch pieces

* 3 cloves of garlic, minced or 3 heaping tsp garlic powder

* 3/4 cup tomato puree

* 2 tsp sea salt

* 2 3/4 cups of chicken broth

* 3/4 cup of frozen peas

1quart water, 1 cup rice, 1/4 extra virgin olive oil, 1 pint chicken or beef broth, 3 cloves garlic minced, pinch of cayenne, 1 pint of chopped veg of your choice, 1 pint of diced tomatoes and juice, 1 tbsp tom paste, 1/2 tbsp honey or sugar, 1/2 tsp salt, 1/4 tsp pepper, 1/4 cup marsala or red wine, 1/4 tsp paprika,........brown rice in cast iron 3-4min, add onion and other vegs, sautte until onion are clear, add garlic, stir in tom, broth, water, and seasonings, stir until boiling, covr to low, cover over low 30 to 40 min. the last 10 min uncover add wine and simmer over medium . Taste again for salt pepper and lemon.



Spanish Rice

1 medium onion diced
3 cloves garlic diced
1 can tomatoe sauce
2 cups long grain rice
2 cups water
In non stick sauce pan add very little oil add onion garlic & rice, add tomatoe sauce water salt/pepper to taste. Let come to a light boil turn heat low cover.



Brown your rice in a small amount of oil. Add in onion,fresh garlic with rice cook till rawness of garlic is gone. Pour in very hot water and add a quarter cup of hot sauce. Add comino and chili powder and salt. simmer till liquid is gone.



Buy a box of Rice-A-Roni Spanish Rice mix and add tomatoes. It's really good.



Get a spanish cook to make them???



Just boil in water for 10 minutes.
When it is done . serve your self ( with some salsa sauce ) and Tell you self It is Spanish rice .
