dominican chicken recipe?!


Question: Dominican chicken recipe?
okay so my husband and best friend are both dominican and ive fallin in love with dominican food
especially the chicken, which is the only thing i have yet to learn how to make.. is that incredible, flavorful chicken leg that they just plop on a big bowl of yellow rice. its just the best!!.. someone please give me the best recipe..

Dominican Fried Chicken (Chicharrones de Pollo) If you like fried chicken, try Chicharrones de Pollo, the Dominican version of fried chicken. The chicken is marinated in a lime based marinade with garlic, then coated in seasoned flour and fried. Serve the fried chicken with traditional rice and beans or potatoes.
Prep Time: 30 minutes Cook Time: 30 minutes Total Time: 60 minutes
Ingredients:

* 2 1/2 pounds boneless chicken strips (breasts, thighs or mixed)
* Marinade:
* 1 cup lime juice
* 4 tablespoons soy sauce
* 2 tablespoons Worcestershire sauce
* 4 cloves garlic (minced)
* Seasoned Flour Coating:
* 2 cups flour
* 2 teaspoons Spanish paprika
* 1 1/2 teaspoons black pepper (or to taste)
* 1 teaspoon salt (or to taste)
* Vegetable oil for frying

Preparation:

1. Combine marinade ingredients in a large plastic bowl or zipper bag. Add chicken and marinate for 30 minutes or up to 3 hours.
2. Combine flour, Spanish paprika, pepper and salt in a separate plastic bowl or zipper bag.
3. Coat the marinated chicken with the seasoned flour mixture.
4. Place vegetable oil for frying into a deep frying pan, or use a deep fryer. Heat the oil over medium-high heat to 360 degrees Fahrenheit.
5. Fry chicken in batches, until golden brown outside and completely cooked inside (about 4 minutes per side).
6. Place chicken on a plate lined with a paper towel to absorb oil. Keep warm until ready to serve.

Serves: Makes 4 to 6 servings.
Notes:
The longer the chicken marinates, the stronger the lime taste will be.
When frying the chicken, don't overcrowd the pan. The oil will cool down and the chicken will not cook properly.

Pollo guisado (Chicken stew) Pollo Guisado is one of Dominican's favorite dishes and a regular feature on the lunch table. Because it is easy to prepare - and delicious - it is more commonly consumed that any other meat dish. In this chicken stew fresh vegetables, and a uniquely Dominican cooking method, are combined to produced a dish that is full of flavor.
Time: 40 Mins Difficulty: Medium Serve: 4 people

Before starting to cook: Wash the chicken with warm water and scrub with the lemon. Cut the chicken in small pieces.

Ingredients:

* 2 lbs of chicken cut into small pieces
* 2 lemons cut into halves
* 2 green bell peppers
* 1/2 cup of chopped celery
* 1 small red onion chopped into fine strips or rings
* 4 plum tomatoes cut into quarters
* 2 tablespoons of oil
* 1/4 cup of seedless olives cut into halves(optional)
* 2 tablespoons of tomato paste
* 1/2 teaspoon of mashed garlic
* 1 teaspoon of sugar
* A pinch of oregano
* Salt
* Coriander leaves

Preparation:
1. In a bowl mix the chicken, oregano, onion, celery, tomatoes, a pinch of salt and garlic. Marinate for 30 minutes. In a pot heat up the oil, add the sugar and let the sugar heat up until it becomes dark brown. Add the chicken (reserve vegetables and herbs) and sauté until the meat is light brown.
2. Add 2 tablespoons of water. Cover and simmer over medium heat for 12 minutes adjusting water when necessary. Add the remaining ingredients (except tomato paste), cover and and simmer until they are tender, adjust water if necessary. Add tomato paste and half a cup of water, simmer over low heat to produce a light sauce. Adjust salt to taste.
3. Serve with Arroz Blanco, a side dish (or salad) and beans.

Arroz Con Pollo (Dominican Style Chicken & Rice)
Ingredients: Servings: 6

* 2 -3 boneless skinless chicken breasts, cut into 1-inch pieces
* 1 tablespoon salt
* 1/4 teaspoon pepper
* 3 garlic cloves, minced
* 2 tablespoons apple cider vinegar or 2 tablespoons white vinegar
* 2 tablespoons tomato paste
* 2 teaspoons oregano
* 1/2 cup red onion
* 1/2 cup red pepper
* 1/2 cup green pepper
* 1/4 cup corn oil (I use Mazola, but any is fine)
* 1 1/2 cups long grain rice
* 3 cups water
Directions:
# 1Throw ALL the ingredients "EXCEPT" Rice & Water into a large pot.
# 2 Cook over medium heat, stirring every so often.
# 3 When liquid starts to diminish add the rice & water.
# 4 Stir and bring to a boil.
# 5 Reduce heat, cover & simmer for approximately 20 minutes. Enjoy! :).
