What do you look for in Korean BBQ/Galbi?!


Question: What do you look for in Korean BBQ/Galbi?
How do you like your Galbi? sweet, salty, with onions or garlic, etc.
What side dishes do you like it with? Other than the obvious kimchi or soup.

Where I go here in Toronto Canada, they serve a variety of Pancan (side dishes), rice and soup it is a package deal, I like Korean chili paste (Gomijan) with mine. If made right and grilled properly they are very nice, trouble is when cutting the short ribs, some are a bit to thick, which makes them chewy, but the marinade can cure that, some use up to 12 ingredients, and a friend of mine who works in a Japanese/Korean restaurant, told me a grated Korean pear is what helps tenderize the meat, even a crushed kiwi fruit I have found give it just enough acid to breakdown the fibres well.
