Kimchi is a very spicy, pickled type of mild cabbage, typically made with napa lettuce as it's main ingredient. There are many varieties of kimchi, but most are made from this form of cabbage or radish or cucumber. It's origins go back to China about 3,000 years ago, although some say it originated in Korea.

I've had it be so spicy that I couldn't taste anything but the heat for a long period of time. It can really clean out your digestive tract if you eat enough of it. I recommend only a nibble to first taste it and not a mouthful, unless you enjoy spicy food.

Tart and a little spicy. I love it. It's a great complement for anything plain (like rice) Perfect for the Jim Bim Bob!
