Eggs Benedict with smoked salmon instead of the ham:

- toast a couple of muffins
- put a slice of smoked salmon on the muffin
- put on a poached egg
- finish off with a nice dollop of hollandaise sauce

My wife is a vegetarian, so I changed the traditional recipe of ham to smoked salmon, and in my humble opinion, it is even better!

I will tell you an Indian style Omelet, which will be hot and spicy.

Cut 2chillies and 1 big onion separately into very small pieces.Cut one small tomato into small pieces.

Heat the frying pan and add three spoons of oil. Slightly fry the onion pieces, chilli and tomato in that order. Add half a spoon of turmeric powder (if available. You can avoid if you do not have. it is good for health, a natural antiseptic and fights lots of diseases).

Keep it down. Beat two or three eggs ans add the above chilli-onion-tomato into it and mix thou roughly. Add salt. Then keep the frying pan again on the fire and when hot pour the mixture and and turn it, take out and serve.

You will love it.

My Mom makes this pretty often, and I love it. Pour a little olive oil in a shallow pan, make layers of the following in it - sliced onions, potatoes, bell peppers & tomatoes. Over this pour a mixture of 2 tsp vinegar to which 1/2 tsp sugar & a pinch of turmeric is added. Grate some processed Cheese over this.Cook covered till potatoes are almost done.
Whip 2 eggs with salt & pour over the prepared veggies. Top it with chopped sausages which is then covered with Mozerella. Put a lid on & cook till done. Takes less than 5 minutes. It is delicious. Yummy !!!!!!!
Can be served by itself or with light toasted bread.

Spinach and Bacon Quiche

Prep Time: 15 minutes
Cook Time: 45 minutes
Yield: 8 servings

6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Preheat the oven to 375 degrees F.

Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

*I love eggs in all forms ----- boiled, poached, fried, scrambled, omlette,etc etc.!!

Scotch Eggs...

i like scrambled eggs and those frans wieners u buy at the store but i would recommend putting the wieners in before the eggs or else u get cold wieners with eggs. u may add toppings like ketchup and jalapenos watever u like with eggs also there is ham. last as a side some beans.
