Why has my turkish delight gone solid?!


Question: Why has my turkish delight gone solid?
I followed the normal recipe I use, but while it's been in the fridge it's just gone rock solid and I don't know where I've gone wrong? When I was cooking it, I burnt the sugar a little, could that maybe be it?

Your answer is in your question. You have undoubtedly cooked the sugar too long. Instead of a soft ball, it went into the crack stage. Check your candy thermometer or perhaps, if you didn't use one, think of purchasing one so your efforts will be more reliable.

Also, turkish delight needs to be kept in a well sealed container to keep it from drying out and becoming hard.

I never put mine in the fridge,so I don't know it that affected it.

Did you leave it out too long? That might be the problem.
